  • Salt and freshly ground black pepper
  • 1 cup part skim ricotta cheese
  • 1/2 cup grated Parmigiano or Romano
  • 1/2 teaspoon fresh grated or ground
  • nutmeg
  • Toothpicks
  • 2 tablespoons extra-virgin olive oil
