Best Ever Banana Bread

Preheat oven to 350F (180C)
- 1 cup (250 mL)butter
- 2 cups (500 mL) sugar
- 3 cups (650 mL) mashed ripe bananas (6)
- 4 eggs, well beaten
- 2 1/2 cups (625 mL)flour
- 2 tsp. (10 mL)baking soda
- 1 tsp. (5 mL) salt
- 1 tsp. (5 mL) nutmeg

Blueberry Bonanza

To make crust: Mix ingredients together and pat lightly into a 9"x13" pan and bake at 350F for 10 minutes
- Crust:
- 1 sleeve of digestive biscuits, finely crushed. (about 27) (graham wafers would be a good substitute)
- 1 tsp. sugar
- 1/4 tsp. cinnamon
- 1/2 cup butter, melted
- Cheese Layer:
- 8 oz. cream cheese
- 1/2 cup sugar
- 2 eggs
- 1 tsp. vanilla
- Blueberry Layer:
- 3 cups frozen blueberries
- 1/2 cup sugar
- 1/2 cup water
- 1 Tbsp. fresh lemon juice
- 4 tsp. cornstarch
- 1/2 cup cold water
- Topping:
- 2 cups whipping cream
- 2 Tbsp. sugar
- 3 digestive biscuits, crushed
COCONUT SWEET POTATO SOUP WITH SHRIMP

A creamy sweet potato and coconut broth that contrasts beautifully with zesty spice-crusted shrimp
- SHRIMP
- 1 1/2 pounds medium shrimp (18-24) peeled, deveined, tails removed
- 2 tablespoons cooking oil
- SPICES
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons coriander
- 3/4 teaspoon ground ginger
- 1/4 teaspoon cayenne
- 1/4 teaspoon kosher salt
- 1/8 teaspoon fresh ground black pepper
- SOUP
- 6 cups chicken broth broth
- 3 pounds sweet potatoes, peeled and cubed (about 9 cups cubed)
- 1 13 1/2 ounce can unsweetened coconut milk (shake can well before pouring)
- 2 tablespoons fresh lime juice
- 1 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
- 3 ounces fresh spinach leaves, slivered (stack leaves and slice them thin)
