Dad's Bread Dumplings

Pour milk mixture over bread cubes to dampen adding milk if necessary

- mug of 1 egg and milk
- 1/2 c flour
- 1 tbsp baking powder
- 1/4 c cream of wheat
Bomb Shelter Croustades

These tasty mushroom filled 'tarts' come from the wife of the architect who designed Pierre Trudeau's bombshelter!
- Croustades:
- 24 very thin slices of white bread
- 2 Tbsp. butter 30 mL
- Mushroom Filling:
- 3 Tbsp. onion, finely chopped 45 mL
- 1/2 lb. mushrooms, finely chopped 250 g
- 4 Tbsp. butter 60 mL
- 2 Tbsp. flour 30 mL
- 1 cup whipping cream 250 mL
- 3 Tbsp. dry white wine 45 mL
- 1/2 tsp. salt 2 mL
- pinch cayenne pepper
- 1 Tbsp. finely chopped parsley 15 mL
- 1 1/2 Tbsp. finely chopped green
- onion 22 mL
- 3 Tbsp. grated parmesan cheese 45 mL
Cinnamon Roll Swirl Cake

- BATTER:
- 3 cups flour
- 1/4 teaspoon salt
- 1 cup sugar
- 4 teaspoon baking powder
- 1 1/2 cup milk
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup butter, melted
- TOPPING:
- 1 cup butter, soft to the point of almost melted*
- 1 cup brown sugar
- 2 tablespoons flour
- 2 tablespoons cinnamon
- GLAZE:
- 2 cups powdered sugar
- 5 tablespoons milk
- 1 teaspoon vanilla
Chicken Curry

In a large frying pan, brown chicken in oil; remove and set aside
- 4 lb. boneless, skinless chicken breasts (approx. 8 chicken breast halves) cut crosswise in 1/2" pieces
- 3 Tbsp. oil
- 3 cups chopped onion
- 1/4 cup minced fresh ginger
- 3 cloves garlic, minced
- 3 Tbsp. curry powder (more if some like it hot!)
- 1 tsp. cumin
- 1/4 tsp. cinnamon
- 2 Tbsp. flour
- 1 cup plain yogurt
- 3 Tbsp. tomato paste
- 3 cups chicken broth
- 1 cup applesauce
- 12 oz. pkg. (340 g) frozen peas
- 1/2 cup sour cream
- 1/2 cup coconut milk
- Condiments
- mango chutney, diced cucumber, diced bananas, currants, shredded coconut and chopped peanuts
Hot Seafood Dip

Mix all ingredients together in a baking dish and bake in 350F oven until heated through
- 4 oz cream cheese
- 1/2 c mayo
- chopped green onion
- 1 can crabmeat or shrimp
- 2 tbsp tomato paste
- dash white pepper
- 2 tsp lemon juice
Chocolate Eclair cake

Preheat oven to 400. Lightly grease a 9″X13″ glass baking pan
- 1 cup water
- 1/2 cup butter
- 1 cup flour
- 4 large eggs
- 1 (8 ounce) package Philadelphia Cream Cheese cream cheese, softened
- 1 large box (5.1 ounces) vanilla instant pudding
- 3 cups milk
- 1 8 oz. container cool whip (you won’t use the whole container) or one batch of homemade whipped cream
- chocolate syrup or homemade chocolate sauce
Jake's Caesar Dressing

Whisk all ingredients together in large salad bowl
- 1 crushed garlic or more
- 2 anchovies
- 3 drops tabasco
- 1 egg
- 3 tsp worcestershire sauce
- 1/2 tsp dry mustard
- 1 lemon squeezed
- salt & pepper
- 1/2 c olive oil
- freshly grated parmesan
Chocolate Pecan Bars

Crust: Combine ingredients and mix to coarse, crumble stage
- Crust:
- 2 cups flour 500 mL
- 1/2 cup white sugar 125 mL
- 2/3 cup butter 150 mL
- Filling:
- 6-1 oz.squares semisweet chocolate 170g
- 1 1/2 cups light corn syrup 375 mL
- 1 1/2 cups white sugar 375 mL
- 4 eggs, slightly beaten
- 1 1/2 tsp. vanilla 7 mL
- 2 cups chopped pecans 500 mL
- Topping (optional):
- 2 Tbsp. butter 30 mL
- 2-1 oz.squares semisweet chocolate 55g
Lamb shanks with chickpeas & Moroccan spices

Soak the chickpeas overnight
- 3/4 c dried chickpeas
- 2 tbsp olive oil
- 4 lamb shanks (medium)
- 2 medium onions , chopped
- 2 tsp finely chooped fresh root ginger
- 3 garlic cloves , finely chopped
- 2 fresh green chillies , seeded and finely chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp freshly ground black pepper
- 1 tsp paprika
- 2 large tomatoes , peeled, seeded and chopped
- pinch of saffron strands
- 1 inch piece of cinnamon stick
- 2 c carrots , cut into thick slices (I use baby carrots quartered if thick)
- 2/3 c dried apricots halved
- 1 tbsp clear honey
- 1/3 c blanched almonds , fried in butter until browned
- chopped fresh cilantro
Curried Butternut Squash Soup with Coconut and Lime

In a large pot over medium heat, warm the olive oil
- 1 1/2 Tbs. olive oil
- 3/4 cup sliced shallots
- 1 Tbs. minced or grated fresh ginger
- 1 garlic clove, minced
- 9 cups peeled and cubed butternut squash (about 3 lb.)
- 3 cups chicken or vegetable broth
- 1/2 tsp. salt, plus more, to taste
- 1 tsp. Thai red curry paste
- 3/4 cup light coconut milk
- 2 tsp. fresh lime juice
