  • 4 lb. boneless, skinless chicken breasts (approx. 8 chicken breast halves) cut crosswise in 1/2" pieces

  • 1/4 cup minced fresh ginger
  • 3 cloves garlic, minced
  • 3 Tbsp. curry powder (more if some like it hot!)
  • 1 tsp. cumin
  • 1/4 tsp. cinnamon
  • 2 Tbsp. flour
  • 1 cup plain yogurt
  • 3 Tbsp. tomato paste
  • 3 cups chicken broth
  • 1 cup applesauce
  • 12 oz. pkg. (340 g) frozen peas
  • 1/2 cup sour cream
  • 1/2 cup coconut milk
  • Condiments
  • mango chutney, diced cucumber, diced bananas, currants, shredded coconut and chopped peanuts

Soak the chickpeas overnight

  • 3/4 c dried chickpeas
  • 2 tbsp olive oil
  • 4 lamb shanks (medium)
  • 2 medium onions , chopped

  • 2 fresh green chillies , seeded and finely chopped

  • 1 tbsp clear honey
  • 1/3 c blanched almonds , fried in butter until browned
