Meatless Minestrone

In dutch oven, saute onion in oil for 2 minutes
- 1 large onion, chopped
- 3 Tbs. olive oil
- 2 celery ribs, chopped
- 2 medium carrots, chopped
- 1 cup chopped cabbage
- 1 medium green pepper, chopped
- 1 medium zucchini, chopped
- 6 garlic cloves, minced
- 3 1/2 cups water
- 2 cans (14 1/2 oz each) diced tomatoes, undrained
- 1 can garbanzo beans or chickpeas, rinsed and drained
- 1 can (15 oz) tomato puree
- 1 can (8 oz) tomato sauce
- 3 Tbs dried parsley flakes
- 2 tsp. dried basil
- 2 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
- 1/2 cup small pasta shells
- fresh basil and parmesan cheese

Drain pineapple measuring juice add water to make 1 cup, set aside
- 1 can (8 oz.) crushed pineapple in juice
- 1/2 c. butter
- 1/2 c. packed brown sugar

- Montreal Steak seasoning
- 1/2 pound penne pasta
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 (8-ounce) can tomato sauce
- 1 cup heavy cream
- 1/2 to 1 tsp salt & pepper (to taste)
- 1 tablespoon fresh parsley, chopped
- 6-8 fresh basil leaves, chiffonaded

- 1/3 Cup red wine vinegar
- 1/4 Cup catsup
- 2 Tbs. crisco oil
- 2 Tbs. soy sauce
- 1 Tbs. worstershire
- 1 tsp mustard
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder

- 1 lb Orzo
- 1 tsp Dijon mustard
- 1/2 C olive oil
- 2 lemons, juiced
- Kosher salt and freshly ground pepper
- 2 C halved red and yellow cherry tomatoes
- 1 C slivered almonds
- 1 small red onion, finely chopped
- 2 green onions, thinly sliced
- 2 T chiffonade fresh basil leaves
- 2 T chiffonade fresh mint leaves
- 5 oz crumbled feta cheese
