Oven Roasted Red Potatoes with Rosemary and Garlic

- 1 1/2 pounds small new red potatoes (about 15), scrubbed and dried
- 1/4 cup extra-virgin olive oil
- 4 to 6 cloves garlic, crushed
- 1 tablespoon fresh or 1 teaspoon dried rosemary
Chicken and Spinach Pasta Bake

- 8 oz uncooked rigatoni
- 1 T olive oil
- 1 c chopped onion
- 1 (10 oz) pack frozen spinach, thawed
- 3 c cubed, cooked chicken breasts
- 1 (14 oz) can Italian-style diced tomatoes, undrained
- 1 (8 oz) container Philadelphia chive & onion cream cheese
- 1/2 t salt, 1/2 t pepper
- 1 1/2 c shredded mozzarella cheese
King Ranch Chicken Casserole

Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender
- 1 large onion, chopped $
- 1 large green bell pepper, chopped $
- 2 tablespoons vegetable oil $
- 2 cups chopped cooked chicken $
- 1 (10 3/4-ounce) can cream of chicken soup, undiluted
- 1 (10 3/4-ounce) can cream of mushroom soup, undiluted
- 1 (10-ounce) can diced tomato and green chiles $
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 12 (6-inch) corn tortillas
- 2 cups (8 ounces) shredded Cheddar cheese, divided
Crock Pot Swiss Steak

Directions Heat the oil in a skillet, then coat the steak with flour and brown in the oil

- 2 lbs beef round steak
- 1/2 cup flour
- 4 potatoes, peeled and quartered
- 2 onions, sliced

S'Mores Cookie Bars

- Ingredients
- 1/2 cup butter, room temperature
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/3 cups all purpose flour
- 3/4 cup graham cracker crumbs
- 1 tsp baking powder
- 1/4 tsp salt
- 2 king-sized milk chocolate bars (e.g. Hershey’s)
- 1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Zucchini Bread

Beat eggs until light and fluffy
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups grated zucchini (1 zucchini makes 2 cups)
- 1 Tbs. vanilla
- 3 cups flour

- 1/4 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
