“Simple as it is, this is one my favorite dishes, and my family loves it
- 3 large tomatoes, thinly sliced
- 1 large red onion, thinly sliced
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon minced fresh basil or 1 teaspoon dried basil
- 1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
- 3/4 cup crumbled feta cheese
- 1 can (2-1/4 ounces) sliced ripe olives, drained

- 1 green pepper (cut in thin strips)
- 1 red pepper (cut in thin strips)
- 1 yellow pepper (cut in thin strips)
- 4 boneless chicken breast (cut in bite size pieces)

- 2 Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until well browned and cooked through, stirring often.
- 3 Stir the soup, milk, cheese, black pepper and linguine mixture in the skillet and cook until the mixture is hot and bubbling, stirring occasionally. Serve with additional Parmesan cheese.
