Hot Artichoke and Banana Pepper Dip

Prepare pita crisps. Increase oven temperature to 400 degrees
- Pita Crisps
- 3-9 oz packages frozen artichoke hearts, cooked, drained, and coarsely chopped
- 2 cups finely shredder Parmigiano-Reggiano cheese or Parmesan cheese (8 ounces)
- 1 1/2 cups light mayonnaise
- 1 large red, yellow, or green sweet pepper, finely chopped
- 1 medium fresh banana chile pepper, sliced crosswise and seeded, or 1/2 cup bottles banana peppers, drained
- 6 cloves garlic, minced
- 2 tsps ground cumin
Spicy Vegetable and Paneer Wraps

Serves 4 Bring a pan of salted water to the boil
- 4 oz/200g spinach leaves
- 2 - 3 tbsp vegetable oil
- 1 inch/3cm ginger, peeled and finely grated
- 3 garlic cloves, peeled and finely chopped
- 1 green chili, deseeded and finely chopped
- 1 small red onion, peeled and sliced
- 1 red pepper, cut into thin strips
- 2 carrots, peeled and cut into thin strips
- 1 tsp sea salt
- 1 tsp garam masala
- 1 tsp hot chili powder
- 1/2 tsp ground cumin
- 225 g/8 oz block of paneer, cut into thin strips
- 2 tbsp chopped cilantro/coriander
- Juice of 1/2 lemon
- 4 chapattis or flour tortillas
- Coriander and chili raita

Home-Style Roasted Vegetables

Heat oven to 450 degrees. In a large bowl combine oil, seasoned salt, marjoram and pepper
- 2 Tbl. olive or vegetables oil
- 1 tsp. seasoned salt
- 1/4 tsp. dried marjoram leaves
- 1/4 tsp. pepper
- 4 Medium russet potatoes, unpeeled, cut into 1 1/2 inch chunks
- 2 medium carrots, cut into 2 x 1/4 x 1/4 inch strips (1-1 1/2 cups)
- 1-2 parsnips, peeled, cut into same size strips as carrots
- 1 red onion, cut into 8 wedges
- 1 medium green bell pepper, cut into 8 pieces

Rice with Chicken (or Without)

Melt Oleo in a large skillet and add all ingredients except chicken, mix well
- 1 Fryer cut up or chicken pieces you perfer
- 1 1/2 cups of raw rice (NOT Minute Rice)
- 1/4 stick of Oleo (margarine)
- 1 can onion soup (not cream of onion)
- 1 can of cream of chicken soup
- 1 soup can of water
- 3 Tbsp of parlsey (dry)
- 1 small can of pimento (chopped)
- Optional: green peppers, mushrooms etc...
Venetian-Style Spaghetti all Arrabbiata

directions Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente

- 1/2 of a 7-ounce jar roasted red sweet peppers, well drained and cut into 1/4-inch-wide strips
