Chicken Lasagna

1. In a large skillet over medium heat, melt butter
- lasagna noodles, cooked according to package instructions
- 2 Tablespoons butter
- 1 clove garlic, minced
- ½ medium onion, chopped
- 2 Tablespoons flour
- 1 Tablespoon cornstarch
- 1 ½ cups milk
- ⅛ teaspoon black pepper
- ½ teaspoon salt
- ¼ teaspoon basil
- 4 ounces cream cheese
- ⅓ cup grated parmesan cheese
- 8 ounces (2 cups) mozzarella cheese, shredded
- 1 cup cottage cheese
- 2 cups cooked cubed chicken
- ⅛ teaspoon oregano
Chile con Queso

Brown sausage & onion. Drain grease
- 1 lb hot pork sausage
- 1/2 onion, chopped
- 2 lbs Velveta
- 1 can rotel
- 7 oz green chilis, chopped
- Lawry's to taste
Potatoes Au Gratin

- 4 whole Russet Potatoes, Scrubbed Clean
- 2 Tablespoons Butter, Softened
- 1-1/2 1-½ cup Heavy Cream
- 1/2 ½ cups Whole Milk
- 2 Tablespoons Flour
- 4 cloves Garlic, Finely Minced
- 1 teaspoon Salt
- Freshly Ground Pepper, to taste
- 1 cup Sharp Cheddar Cheese, Freshly Grated
Chicken & Veggie Tostada

Preheat broiler. Comine first 3 ingredients, stirring well
- 1 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp canola oil
- 12 oz chicken breast tenders
- 1 cup corn kernels
- 1 cup chopped zucchini
- 1/2 cup salsa verde
- 3 Tbs chopped cilantro

- 1 cup shredded monterey jack cheese
Beer Bread

Melt butter & pour enough in a 9x5" loaf pan to coat the bottom
- 1/2 cup butter
- 3 cups self-rising flour
- 2 Tbs sugar
- 12 oz beer
Cheesy Biscuits

Follow directions for drop biscuits (rolled & cut)
- Bisquick
- 5 Tbs butter
- 2 cups grated cheddar
- 1 tsp garlic powder
Green Rice

Butter casserole. Mix together & bake 45 minutes at 350
- 1 can cream of mushroom soup
- 1 small jar cheese whiz
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 stick butter, melted
- 1 1/2 cups minute rice
- 1 pkg chopped broccoli
Grilled Ham

Combine honey & dijon mustard to taste
- 1 cooked ham slice
- dijon mustard
- honey
- black pepper
Baked Parmesan Tomatoes

Preheat oven to 450° F. Place tomatoes cut-side up on a baking sheet
- 4 tomatoes, halved horizontally
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
Honey Lime Pork Chops

- 4 - 4 oz boneless pork chops
- 1 pkg Lipton onion soup mix
- 1 Tbs scallions, chopped
- 3 Tbs honey
- 3 Tbs fresh lime juice
- 1/4 cup soy sauce
- 1/8 tsp ground ginger
- Kosher salt
