Easy Ranch Baby Carrots

Preheat oven to 400 degrees F
- 1 (16-ounce) package baby carrots, patted dry
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 tablespoons chopped parsley leaves
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon dried dill
- 1/4 teaspoon ground black pepper
Baked Honey-Marinated Cod

Combine all ingredients (except for fish) in a medium-sized airtight mixing bowl
- 4 , 6-oz black cod fillets (aka sablefish)
- 3/4 cup honey
- 1/2 cup low-sodium soy sauce
- 1/3 cup toasted sesame seed oil
- 1/3 cup apple cider vinegar
- 1 1/2 tsp freshly ground pepper
- 1 tsp freshly chopped ginger
French Onion Pork Chops

Heat the olive oil over medium heat in a large, high-sided skillet until it shimmers
- for caramelized onions:
- 2 cups yellow onions, cut in half, and thinly sliced
- 1 tbs olive oil
- 1 tsp salt
- 2 tsp water
- 1 tsp granulated sugar
- for the pork chops:
- 1 lb (4) boneless pork chops
- 1/2 cup beef broth
- 1 pkt onion soup mix
- 1/2 tsp black pepper

Preheat oven to 250. In a large bowl, mix together all ingredients
- 1/2 cup canola oil
- 1 (1-oz) package Ranch dressing mix
- 3-5 tsp red pepper flakes
- 1 (13.7oz) box Cheez-Its
Pecan Pie Mini Muffins

- 1 cup brown sugar, packed
- 1/2 cup flour
- 1 cup chopped pecans
- 2/3 cup butter, melted & cooled
- 2 eggs, beaten
Baked Salami

Slice salami about ⅛ to ¼ inch thick, but not all the way through
- 1 whole salami (any size)
- 1 jar apricot preseves (12 oz jar)
- 1/2 jar Dijon mustard (6- 8 oz jar)
Loaded Mashed Potato Casserole

Combine all ingredients except bacon & cheese in a large bowl
- 5 1/2 cups mashed potatoes
- 1/2 cup milk
- 8 oz cream cheese, softened
- 8 oz sour cream
- 2 tsp dried parsley
- 1 tsp garlic salt
- 1/4 tsp nutmeg
- 3/4 cup shredded cheddar cheese
- 1/2 cup bacon, cooked & crumbled
Mississippi Roast

Put roast in crock pot. Sprinkle ranch mix and gravy mix on top
- 1 chuck roast (4-5lbs)
- 1 packet ranch dressing/dip mix
- 1 packet gravy mix (chicken/brown/au jus)
- 1 stick butter
- 5-10 pepperoncini peppers
Taco Shrimp

In a skillet, cook the shrimp in the olive oil and sprinkle on the spices in the last few moments of cooking
- 1 pound large, pre-cooked shrimp – thawed if frozen
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil (or any oil you prefer)
- Juice of 1 lime

- 1/2 C mayonnaise or plain yogurt
- 1 T corn syrup
- 2 T parmesan cheese
- 1 t lemon juice
- 1 T apple cider vinegar
- 1/4 t thyme
- 1/4 t marjoram
- 1/4 t oregano
- 1/4 t basil
- 1/2 t red pepper flakes
- 1/2 t salt
- 1/4 t black pepper
