Chipotle Chicken Taco Salad

To prepare dressing, combine first 7 ingredients, stirring well
- Dressing:
- 1/3 cup chopped fresh cilantro
- 2/3 cup light sour cream
- 1 tablespoon minced chipotle chile, canned in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- Salad:
- 4 cups shredded romaine lettuce
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced peeled avocado
- 1/3 cup thinly vertically sliced red onion
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
Cheesy Potatoes

Mix all ingredients except corn flake mixture
- topping:
- 1 bag potato squares
- 1 can cream of mushroom soup
- 1 pt sour cream
- 2 cups shredded cheddar
- 1 sm onion chopped
- 3/4 stick butter, melted
- 2 cups corn flakes, crushed
- 1/4 cup melter butter
Creamy Cajun Chicken Pasta

Place chicken and Cajun seasoning in a bowl and toss to coat
- boneless, skinless chicken breasts, cut up
- linguine, cooked
- 2 teaspoons cajun seasoning, or more - to taste
- 2 tablespoons butter
- 1-2 cup heavy whipping cream
- sun-dried tomatoes, chopped, to taste
- salt, to taste
- basil, to taste
- black pepper, to taste
- parmesan cheese
- green onion, chopped, to taste

- 1 tablespoon oil

- 1/4 cup hot sauce

Mini Chile Relleno Casseroles

This is a recipe from Eating Well & we really liked it
- 2 4-oz cans diced green chiles, drained and patted dry
- 3/4 cup frozen corn, thawed and patted dry
- 4 scallions, thinly sliced
- 1 cup shredded reduced-fat cheddar cheese
- 1 1/2 cups nonfat milk
- 6 large egg whites
- 4 large eggs
- 1/4 tsp salt
Creamy Garlic Mushrooms

1. Heat a pan with a teaspoon of oil and add the mushrooms and garlic on medium heat
- 8 oz whole white mushrooms
- 2 cloves of garlic, minced
- 2 tablespoons of Cream Cheese. (you can also use low fat variety)
- 1 teaspoon of fresh or dry herbs, such as tarragon, basil, parsley
- salt & pepper
- 1 teaspoon of Olive Oil
Crab Dip

Mix all ingredients in blender except crab
- 1 can crab meat
- 8 oz sour cream
- 4 oz cream cheese
- 1 jar cheese sauce
- 1 Tbs horseradish
Hot Sweet Onions

- 3 large onions, cut into 1/4 in slices
- 2 Tbs honey
- 1/2 tsp each of dry mustard, salt, paprika & pepper

My mom found this recipe and I love it even though I don't like canned cranberry sauce
- 3 cups fresh cranberries
- 1/2 cup water
- 1/4 cup sugar
- 1 3/4 cup Splenda
- 1/2 cup orange juice
- 1 tb lemon juice
- 1 tsp brandy
Pineapple Whip
