- 2 Tablespoons Bacon Grease
- 1 pound Smoked Sausage
- 1 cup Onion, Chopped
- ½ cups Green Onions, Chopped
- 1 cup Bell Pepper, Chopped
- 1 cup Celery, Chopped
- 3 cloves Garlic, Crushed
- 1 cup Parsley, Chopped
- 3 cans Chicken Stock
- 1 cup Water
- 3 cups Rice, Uncooked
- 3 Tablespoons Creole Seasoning (Tony Chachere's)
- 1 teaspoon Black Pepper
Italian Pasta Salad

Prepare the salad dressing according to the package instructions using red wine vinegar and olive oil
- 2-10 ounce packages of dried cheese tortellini
- 2 packets Good Season’s Italian dressing mix-prepared according to package directions
- 1 red bell pepper, diced
- 1 medium red onion diced
- 1 medium sized container of white button mushrooms, quartered-(they really soak up a lot of the dressing as the salad marinades)
- 1 can of artichoke hearts packed in water, cut into bite sized pieces
- 1/4 lb of pepperoni or hard salami, cubed
- 1/4 lb of provolone or mozzarella cheese, cubed

Blend ingredients with ice for frozen margaritas or let concentrates thaw and then mix together for on the rocks

Buffalo Chicken & Potatoes

Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray
- 1 1/4 lb boneless skinless chicken breasts, cut into 1-inch strips
- 1/3 cup buffalo wing sauce
- 6 cups frozen (thawed) southern-style hash brown potatoes
- 1 cup ranch or blue cheese dressing
- 1/2 cup shredded Cheddar cheese (2 oz)
- 1 can (10 oz) condensed cream of celery soup
- 1/2 cup corn flake crumbs
- 2 tablespoons butter or margarine, melted
- 1/4 cup chopped green onions (3 to 4 medium)

Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven
- 2 teaspoons olive oil
- 1 pound Italian turkey sausage, casings removed
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 (32-ounce) container chicken broth
- 1 (15-ounce) can tomato sauce
- 1 (14 1/2-ounce) can petite diced tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
- 1/2 cup chopped fresh basil
- 3 tablespoons grated parmesan cheese
- 1/2 cup reduced-fat shredded mozzarella cheese
- 8 Whole-wheat breadsticks or grissini (optional)

Mix dry ingredients together
- 1 c yellow & coarse cornmeal
- 1 c flour
- 2 tsp baking powder
- 2 tsp salt
- 2 tsp suger
- 1 egg
- 1 cup milk
- oil
Corn Dip

Mix all ingredients together, except cheese
- 2 can Mexi-Corn, undrained
- 16 oz sour cream
- 1 cup mayo
- juice from 1 lime
- 1 bunch cilantro
- 4 stalks green onions, chopped
- 1 tsp cumin
- 1 tsp cayenne
- 2 cups Mexican blend shredded cheese

Cook bacon and set aside. Use bacon grease to brown 1/2 - 3/4 bell pepper & onion
- 3 - 4 strips of bacon.
- 2 can pork & beans

- reg can diced tomatoes
- tsp garlic powder
- 2 Tbs molasses
- 1/2 - 1 cup brown sugar
- 1 tsp Cavendar's
Baked General Tso Chicken

Preheat oven to 375 degrees
- 1 lb boneless, skinless chicken breasts, cut into strips
- 1/2 cup liquid egg whites
- 1/2 cup whole wheat flour
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- 1 tsp fresh ginger, minced
- 1/4 cup low sodium soy sauce (or Bragg’s Liquid Aminos)
- 1/4 cup vinegar (I used apple cider vinegar)
- 1 tbsp sesame oil
- 2 tbsp chili sauce
- 3 cloves garlic, minced
- 2 tbsp 100% pure maple syrup
- 1 tsp cornstarch
