Shrimp, Spicy BBQ

- 1 cup (2 sticks) butter
- 1 cup olive oil
- 1/3 cup hot sauce
- 8 cloves garlic, minced
- 4 bay leaves
- 2 lemons, thinly sliced
- 2 teaspoons dried basil leaves
- 1 teaspoon dried oregano leaves
- 1 teaspoon ground black pepper
- 1 teapoon salt
- 3 pounds unpeeled large shrimp
- French Bread
Jambalaya (Sue's Honey Island Jambalaya!! )

This is delicious and Dick loved!
- 2 lbs Italian sausage (crumbled-- Saute in large pan.
- 3 packs frozen chopped seasoning or 3 cups (fresh bellpepper, onion, celery)
- Brown the above together and skim off any excess grease.
- Season to taste with garlic powder
- 2 Tablespoons McGuffy's spice or other
- full bodied seasoning
- 4 Tablespoons Worcestershire sauce.
- Add 1/2 can Ro-Tel Tomatoes
- Add 4 cans Swanson's chicken broth or stock to cover seasoning and meat mixture.
- Cover and simmer a few minutes.
- Add 1 to 3 cups of any meat or shell fish as desired shrimp, crawfish, turkey, chicken, etc.
- I added 1 lb peeled shrimp and some Polish sausage.
- Cover and simmer some more!
- Add 2 to 4 cups of rice (Minute rice )depending on how large your pot is.
- Cover and cook on "hi" for 15 minutes or so; then turn down and cool, stirring occasionally until tender!
- Enjoy!

Seafood Grilled Sake Glazed Hawaiian Ahi

For Tuna: Mix the vegetable oil with the sake, soy sauce, and lime juice in a small bowl
- Smoked Pineapple and Pepper Relish:
- 4 -( 4 ounce) Hawaiian Ahi Steaks
- (Yellow Fin Tuna)
- 2 teaspoons vegetable oil
- 1 tablespoon sake
- 1 tablespoon soy sacue
- 1 tablespoon lime juice
- 1/2 ripe pineapple (cleaned)
- 1/2 small yellow onion
- 1 small red bell pepper
- 3 tablespooons red wine vinegar
- 2 tablespoons chinese parsley (Cilantro)
- 1 teaspoon soy sauce
- 1 tablespoon olive oil

- 2 fried chicken breasts choppped
- 1 1/2 jalpeno peppers minced
- 1/2 small green pepper
- 2 or 3 green onions, green parts also chopped
- 3 ribs of celery chopped fine
- 1 cup maonnaise
- salt and pepper to taste

In a large dutch oven, heat the salt pork until the fat melts
- 1/2 pound ground or finely-diced salt pork
- 1 pound onions
- 1 gallon clam juice
- 1 pound potatoes diced
- 1 tablespoon paprika
- 2 cups canned tomato puree
- 1 1/2 quarts chopped quahogs (large hard-shell clams)
- Water as needed
- Salt to taste
- Freshly-ground black pepper to taste

- 1 cup vegetable oil
- 1/2 cup sugar
- 1/3 cup sugar
- 1/3 cup cider vinegar
- 1 tablespoon poppy seeds
- 1 teaspoon salt
