Pineapple Boat Shrimp with Fruit Salsa

- 2 pounds (21/25 count) shrimp, cleaned and deveined
- 1/3 cup soy sauce
- 1 tablespoon minced lemongrass
- 2 tablespoons minced ginger
- 2 tablespoons cornstarch
- 2 tablespoons peanut oil
- 2 cups diced red bell pepper
- 2 cups diced yellow onion
- 1 tablespoon minced jalapeno
- 1 tablespoon minced garlic
- Fruit Salsa, recipe follows
- 1 tablespoon minced fresh mint leaves
- 1 teaspoon seeded and finely diced serrano pepper
- 1 tablespoon minced ginger
- 1/4 cup rice vinegar
- 1 pinch red pepper flakes
- core removed and fruit diced
- 3/4 cup small dice red onion
- 1 cup small dice red bell pepper
- 1 (15-ounce) can apricots, drained and diced
Shrimp, in Avocado Halves

- 1 pound small shrimp, poached and peeled.
- 1/2 cup fresh tomato juice
- 3 tablespoons cilantro, chopped
- 2 cloves garlic, minced
- 3 slices sweet onion, finely diced
- 1 small jicama, diced
- 1 jlapeno pepper, seeded, finely diced(optional)
- 2 limes, juiced
- Salt and pepper to taste
- 2 ripe Hass Avocados from Mexico
Pie, Splenda Fresh Berry

Mix berries together in a large bowl
- 3 cups fresh strawberries quartered or sliced
- 2 cup fresh raspberries
- 1 cup fresh blackberries
- 1 cup fresh blueberries
- 2/3 cup water, divided
- 3/4 cup SPLENDA Sweetener granulated
- 1 envelope unflavored gelatin which is 1/4 ounce
- 1/4 cup raspberry jam
- 1 prepared reduced-fat graham cracker crust
Dressing, Olive Garden Salad Dressing

Mix all together and shake
- 8 ounces Paul Newman's vinegar and oil dressing
- 1 garlic clove peeled and halved
- 1/2 Tablespoon Basil
- 1/2 Tablespoon Oregano
- 1 Tablespoon sugar or 3 packages Sweet and Low
Dip, Homemade Ranch Dipping Sauce

- 1/2 cup mayonnaise
- 1/2 cup plain yogurt or sour cream (I used sour cream)
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 easpoon onion powder

Mix all ingredients in a large bowl then place in 1 quart baking dish
- 1 lb. ground beef
- 1/2 green pepper diced
- 1/2 medium sweet onion diced
- 3 cloves garlic minced
- 2 tablespoons worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 tablelspoon Annie's spice
- 1/2 can stewed tomatoes Del Monte original with onions, celery, green pepper
- 15 saltine crackers squares
- 2 eggs
Salad, Curry Chicken Salad

Gently combine the chicken, celery, water chestnuts, grapes, and almonds in a large glass bgowl
- Dressing:
- 1 large roasted or rotisserie chicken (3 to 3 1/2 pounds), skin and bones discarded, cut into 1-inch cubes
- 1 cup chopped celery
- 1 (8-ounce) can sliced or chopped water chestnuts, drained
- 2 cups seedless red grapes, halved
- 1 (2-ounce) package slivered almonds
- 1 cup mayonnaise
- 1 tablespoon prepared chutney
- 1 tablespoon fresh lemon juice
- 1 teaspoon soy sauce
- 1 1/2 teaspoons curry powder
- Salt

- 1 clove garlic crushed
- 2 teaspoons butter
- 1/4 teaspoon pepper (black)

- 1/4 cup mayonnaise
- 3 tablespoons milk
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- dash cayenne pepper, or Tabasco sauce, or to taste
- 1 can (7 1/2 ounce) crabmeat, cartilage removed, finely chopped
Sauce Orange Cilantro Butter Sauce

In a heavy gauge sauce pan, reduce orange juice by 75%
- 1 pint orange juice
- 4 ounces whole butter
- 1 pint heavy cream
