Sopa De Pollo (Chicken Soup)

Add chicken and water to a large pot
- 2-3 lbs of chicken (any parts you like but make sure you have bones, I use thighs)
- 2 quarts of water
- 2 potatoes
- 2 tablespoons sofrito
- 1 cube chicken bouillon
- 1/4 cup tomato sauce
- 1 pack Goya sazon
- 2 tablespoons fresh parsley, chopped (make sure it's fresh and not dry)
- 1/2 lb bow tie pasta
- Salt and Pepper to taste

In large saucepan cook chicken in broth until no longer pink
- 3-4 quarts chicken broth
- 2 boneless skinless chicken thighs or 1 large chicken breast, cut into bite sized pieces
- 4-5 garlic cloves, minced
- 1 medium onion, diced
- 2 bags fresh spinach OR 1 box frozen spinach, thawed
- 1 can sliced mushrooms
- 1 can Great Northern beans, drained and rinsed
- 1 can Butter beans, drained and rinsed
- Grated Parmesan cheese

When traveling through Atlanta Airport, I always stop at "One Flew South" and get this soup
- 1 t olive oil
- 1 T shallots (small diced)
- 3 oz pulled leg & thigh meat
- 1 t onion (small diced)
- 1 T celery (cut on a bias and blanched)
- 1 T carrots (cut in half, then on a bias)
- 1 T parsley (chopped)
- 8 oz Five spice broth
- 1/2 t green onion (cut on a bias)
- 2 oz soba noodles (cooked)
- 1 T Napa cabbage (chiffonnade)
- Salt & Pepper
- Five spice to taste

In a medium-sized pot, add the water, broth, chicken, ginger and garlic; cook until the chicken is very tender
- 1 boneless-skinless Chicken thigh
- 2 C. Chicken Broth (I tried Swanson’s Cooking Stock, I really liked it)
- 2 C. Water
- 1 Garlic clove, peeled and smashed
- 1/2 inch piece of fresh Ginger Root, cut into matchsticks (I used more like an inch)
- A pinch of Sea Salt (taste before adding, you may not need it)
- 1/3 of a package of SaiFun or Bean Threads (Long Rice)
- 3 Green Onions, cut into 1 inch pieces

1. Heat oil in a large stock pot or dutch oven over medium heat
- 2 Tsp. garlic-infused olive oil
- 1 cup carrot, sliced thin
- 1 bunch of green onions, greens only, chopped aprox. 3/4 t. salt
- 1/2 t. black pepper
- 1 1/2 T. tuscan-herb low-fodmap spice mix (or add other italian herbs like parsley, basil, oregano, thyme, or rosemary to your liking)
- 1/2 cup dry white wine (or whichever you have on hand)
- 4 cups low-fodmap chicken stock
- 2 cups chopped cooked chicken (leftovers from making chicken stock would be great)
- 2-3 oz. dry corn pasta (any shape), cooked
