- Unsalted butter
- 1 English muffin, split
- 1 breakfast sausage patty
- 2 slices American cheese
- 2 large eggs, beaten to blend
- Kosher salt and freshly ground black pepper
- Handful of chopped fresh chives
- Hot sauce and honey (for serving; optional)
- 1 tablespoon finely chopped fresh sage
- 1 tablespoon finely chopped fresh thyme
- 2 teaspoons light brown sugar
- 1 1/2 teaspoons kosher salt
- 1 teaspoon crushed fennel seeds
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika

- 4 slices of cheddar cheese
- 1 c. grated jack cheese
- 8 slices of black forest ham
- 8 slices of Texas toast, garlic style

- creole seasonings
- Hellmann's mayonnaise

Do prep work first so it goes quickly after that
- Use English Toasting Bread and slice kinda thick or use a thicker sliced bread
- Eggs, whisked with salt and pepper..use 2 for each sandwich
- diced fresh tomato and green onion
- mozzarella cheese, shredded
- diced bacon, fried and drained
- Canadian bacon or cooked sausage patties
- Sliced cheese- I use Pepper Jack
