Hawaiian Huli Huli Chicken

- Gluten-Free Barbecue Sauce
- 1 clove garlic, minced
- 1 teaspoon ginger, finely grated
- 1/4 cup gluten-free soy sauce
- 2 tablespoons fruit juice (pine- apple, orange or tropical blend)
- 2 teaspoons potato starch (not potato flour), arrowroot powder or cornstarch
- 3 tablespoons ketchup
- 1/4 cup coconut sugar or dark brown sugar
- 1 teaspoon Sriracha sauce (Asian chili sauce) or 1/4 teaspoon red pepper flakes
- Pepper, to taste
- Chicken
- 8-10 chicken thighs, bone in, skin on
- Salt and pepper, to taste
- Cooking oil, for brushing grill
One Pot Teriyaki Chicken and Pineapple Rice

1.Whisk together Teriyaki Sauce ingredients in a small bowl
- 4 boneless, skinless chicken breasts or thighs
- 1 1/2 cups long grain white rice
- 1 20. oz can crushed pineapple
- Olive oil
- Teriyaki Sauce/Glaze
- 1/2 cup reduced sodium soy sauce
- 1/2 cup sugar
- 1/4 cup cider vinegar
- 1 teaspoon ground garlic
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sriracha
- 2 teaspoons cornstarch

- 4 skinless chicken thigh cutlets
- 2 tbsp cooking oil
- 2 tbsp fish sauce
- 1 medium onion, sliced
- 3 cloves garlic, sliced
- 1/4 tsp freshly ground black pepper
- 1/4 cup light soy sauce
- 2 tbsp palm sugar, grated (or brown sugar)
- 1/4 - 1/2 cup water
