- 3 ounces rice vermicelli

- 1 Tbsp Hoisin Sauce*
- 1 Tbsp Maple Syrup
- 1/2 tsp Ground Ginger
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/8 tsp Cayenne Pepper
- For the Spring Rolls:
- 1 and 1/2 cups (200g) Sliced Cucumbers
- 2 cups (178g) Shredded Red Cabbage
- 1 Red Bell Pepper (Sliced)
- 1 Avocado (Sliced)
- 1 Large Carrot (Shredded)
