Melon and Mint Lemonade

Ingredients
- 6 cups cubed ripe honeydew melon
- 2 cups lemon juice
- 1 cup water
- 1 cup Mint or Plain Simple Syrup
- Mint leaves, honeydew and/or cantaloupe balls (optional)
- SIMPLE SYRUP: 4 Servings
- 2 cups sugar
- 2 cups water

Preparation
Step 1
1. In a blender place honeydew cubes and lemon juice. Cover and blend until smooth; add water, and simple syrup. Cover; blend just until combined. Transfer mixture to a pitcher. Pour into ice-filled glasses. Add mint leaves and melon balls, if desired.
SIMPLE SYRUP:
In a small saucepan combine water and sugar. Bring to a boiling, stirring to dissolve sugar. Remove from heat. Cool to room temperature. Cover and chill at least 2 hours or up to 2 weeks
