Lemon Brownies

These brownies combine the refreshing taste of lemon with the dense consistency of fudge brownies. A great treat on a hot summer day!
Ingredients
- Lemon Brownies:
- 1/2 cup unsalted butter, softened
- 3/4 cup flour
- 2 large eggs
- Zest from 2 lemons
- Juice from 2 lemons
- 3/4 cup sugar
- 1/4 tsp sea salt
- Lemon Cream Cheese Frosting:
- 8 oz. package cream cheese, at room temperature
- 1 1/2 cups powdered sugar
- 1 Tbsp fresh lemon juice
- Lemon zest (optional)

Lemon Brownies:
Preheat the oven to 350 degrees Fahrenheit. Spray the bottom and sides of an 8" x 8" glass baking dish; Set aside. In a medium bowl, beat the flour, sugar, salt, and softened butter until combined. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Add the egg mixture to the flour mixture and beat for 2 minutes at medium speed until smooth and creamy. Pour the batter into the prepared baking dish and bake for 23-25 minutes. *The edges of the bars should turn a golden color. DO NOT over bake the bars or they will become dry.* Allow the bars to completely cool before adding the frosting. Frost the lemon brownies and place in the refrigerator until ready to serve.
Lemon Cream Cheese Frosting:
Beat the cream cheese using an electric mixer in a medium bowl until softened. Slowly add the powdered sugar, lemon zest, and lemon juice; Beat until creamy, about 3 minutes.
