  • 1 box vanilla wafer cookies
  • 1 can condensed milk
  • 3 eggs separated
  • 1/4 teaspoon cream of tartar
  • 1/2 -3/4 cup lemon juice (approx. 3 lemons)
  • 1 teaspoon vanilla extract
  • 6 tablespoons sugar

Step 1

Crush vanilla wafers and arrange in a pie pan to form crust. Mix condensed milk, egg yolks, lemon juice and vanilla together and add to crust. Beat 3 egg whites with 1/4 tsp cream of tartar until stiff then gradually add sugar. Spread beaten egg whites on top of lemon mixture. (To make peaks insert fork and quickly pull fork straight up.) Bake at 350 F for approximately 15 minutes. Chill overnight.
