Ingredients

  • 2 oranges (preferably navels)
  • 1 1/2 cups almond meal
  • 1 cup raw sugar
  • 6 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla essence

Preparation

Step 1

Simmer oranges uncovered for 2 hours, topping up water if needed.
Drain and cool.
Quarter the oranges and discard any seeds.
Blend oranges.
Add eggs one at a time.
Mix almond meal, baking powder and sugar. Add to orange mix, then mix vanilla through.
Line 22cm spring form cake tin with baking paper.
Bake 1 hour at 160 C.
Can dust with caster sugar when cool if desired.
Nice served with natural yoghurt.
