Shrimp with Roasted Red Peppers & Asparagus

Quick and easy shrimp dish with asparagus and red peppers takes a hint of a Mexican flair with the cilantro, avocado and lime juice. Serve with a side of rice.

Ingredients
- 1 to 1 1/2 pounds shrimp, peeled and deveined
- 2 tablespoons butter
- 3 cloves garlic, minced
- 6 to 8 asparagus, chopped
- 1/4 red onion, chopped
- 4 or 5 roasted red peppers cut into strips
- 1 teaspoon oregano
- 2 teaspoon green chile powder
- 2 teaspoon cilantro
- Pinch or two of sea salt
- Pinch of pepper
- 1 avocado, chopped
- 1 lime, juiced

Step 1
In a large pan, melt butter over medium heat. Add asparagus, onion, and garlic and cook for about 8 minutes. Add roasted red peppers, shrimp and seasonings. Cook just until shrimp turns pink (about 2-3 minutes).
Add avocado and juice of lime and stir. Remove from heat and serve with favorite side dish.
