Ingredients

  • 1 tbs grated lemon peel
  • Juice of 2 large lemons (about 1/3 cup)
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley
  • 2 tbs minced shallots
  • 1 tbs minced garlic
  • 1 tsp chopped fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 3 whole chicken cut in pieces

Preparation

Step 1

1. Combine all ingredients except chicken in bowl. Dip chicken in marinade; place in 3 heavy duty plastic storage bags with any remaining marinade. Refrigerate 4 hours (can be refrigerated up to 24 hours. Let come to room temp 1 hour before cooking)

2. Prepare grill or preheat broiler and broiler pan. Grill over low heat or broil 4 inches from heat source 25-30 min, turning and brushing with reserved marinade every 5 minutes.
