Lemon Blueberry Syrup
From Rita Heikenfeld. Good on waffles or pancakes. Note range of sugar...depends on sweetness of blueberries.

Ingredients
- 4 T butter (1/2 stick)
- 1/2 - 1 cup sugar
- 2 generous cups blueberries, fresh or frozen
- 2-3 T fresh lemon juice
- 1 T cornstarch ( I would use arrowroot powder)

Preparation
Step 1
Place butter, sugar, and berries in pan. Cook over medium heat for 5 minutes, or until berries pop. Combine lemon juice and cornstarch and stir into sauce. Cook until thickened, about 3-5 minutes. Makes about 3 cups. Store in refrigerator. Warm before serving.
