Crispy Parmesan & Onion Crusted Chicken

These were really good! I have to admit I was real skeptical about this. I love French-fried onions & only know to use them on green bean casserole. I was concerned coating them on chicken would be too much, but it turned out perfectly. The only thing I did differently is I needed to double the onions & cheese.
Ingredients
- Cooking spray
- 2 (6 oz.) containers, or about 3 cups, French-fried onions
- 1 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tablespoon Italian seasoning
- 2 tablespoons Dijon mustard
- 8 boneless, skinless chicken thighs
