Ingredients

  • Crust:
  • 1/2 cup butter or margarine (1 stick), softened
  • 1/3 cup C&H Pure Cane Powdered Sugar
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 2/3 cups Powdered Sugar
  • 2 tbsp. all-purpose flour
  • 1 tsp. lemon rind, finely grated
  • 1 tsp. lime rind, finely grated
  • 2 tbsp. lemon juice
  • 2 tbsp. lime juice
  • 1/2 tsp. baking powder
  • Powdered Sugar (for sifting on top)

Preparation

Step 1

Heat oven to 350°F. With electric mixer, beat butter, 1/3 cup powdered sugar and 1 cup flour until blended. Press dough into an 8-inch square pan. Bake 15 to 20 minutes until lightly browned. In another bowl, beat eggs slightly; beat in 1 2/3 cups powdered sugar, 2 tablespoons flour, grated lemon & lime rind, juices and baking powder; mix well. Pour mixture onto hot crust. Return pan to oven and bake 15 to 20 minutes or until a light brown crust forms on top. Cool in pan completely, then sift additional powdered sugar on top. Cut into 2-inch squares.
