Clean Eating Lemon Vinaigrette

There was a restaurant in San Diego and I absolutely loved this vinaigrette. I was lucky enough to have gotten to know the chef and asked him for the recipe one day. I could never get it exactly the way he made it and I’ve made some modifications over time as I don’t always have fresh lemons on hand but it’s good just the same.

Ingredients
- 1/2 cup extra-virgin olive oil
- 3/8 cup lemon juice
- 2 tablespoon white wine vinegar
- 2 teaspoon dijon-style mustard
- 1 teaspoon thyme
- 1 clove garlic, minced
- 1/2 teaspoon coarse salt
- Pinch black pepper freshly cracked black pepper

Step 1
In a jar or bowl, combine olive oil, lemon juice, mustard, thyme, garlic, salt, and pepper.
Mixed with a hand blender.
Shake or stir just before serving.
