Ingredients

  • For the Crust:
  • 1 cup all-purpose flour
  • 1/2 cup confectioners' sugar
  • 8 tablespoons unsalted butter
  • For the Filling:
  • 2 eggs, lightly beaten
  • 1 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/4 cup orange juice
  • zest of 1 orange, finely grated
  • Confectioners' sugar for dusting

Preparation

Step 1

DIRECTIONS
Preheat the oven to 375 degrees F. Lightly butter an 8-inch square baking dish.

TO MAKE THE CRUST:
In a bowl, combine the flour and confectioners’ sugar. Cut in the butter until it is absorbed. Press the mixture into the prepared pan and bake for 20 minutes.

TO MAKE THE FILLING:
In a bowl, beat together all the ingredients. Pour the mixture over the baked crust. Return the pan to the oven and bake for 20 to 25 minutes, or until the filling is set.

Cool on a rack, then chill. Before serving, dust the top with confectioners’ sugar.
