Ingredients
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup poppy seeds
- 3/4 cup butter softened
- 1 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/4 cup plain yogurt
- zest and juice of 2 lemons (1/2 cup juice )
- Glaze juice of 1 lemon and 1/3 cup icing sugar Combine to runny.

Preparation
Step 1
Preheat oven to 375 degrees. Line muffin pan with pan liners.
Sift dry ingredients together and add poppy seeds.
Cream butter, sugar...add eggs beat til fluffy.
In a measuring cup mix buttermilk, yogurt, lemon zest and juice.
Alternate half the dry ingredients and buttermilk mixture but do not over mix. Ice cream scoop 3/4 full.
Bake for 15-20 minutes. Toothpick dry.
Let stand 10 minutes and remove from pan. Pour glaze over muffins poked with a skewer.
