Lemon Meringue Pie (Sid)

Ingredients
- 1 1/4 cup sugar
- 6 Tbsp cornstarch
- 2 cups boiling water
- 3 egg yolks (save egg whites for meringue)
- 3 Tbsp. butter
- 6 Tbsp. lemon juice

Preparation
Step 1
Heat oven to 325 degrees. Mix sugar and cornstarch. Stir in boiling water, cook over direct heat, stirring constantly, until mixture thickens and boils. Beat egg yolks slightly: beat in a little of the hot mixture. Then beat into hot mixture in double boiler. Cook 5 minutes, stirring constantly. Remove from hot water. Blend in butter and lemon juice. Cool Pour into baked 9" pie crust. Cover with meringue. Bake until slightly brown, about 10 minutes. Cool.
Meringue
3 egg whites
1/4 twp. cream of tarter
6 Tbsp. sugar
Beat egg whites and cream of tarter, add sugar. Beat slowliy until stiff peaks form
