Greek Stuffing with Ground Beef, Apples and Rice

This stuffing has the flavors of your favorite Greek foods, and is hearty side dish filled with ground beef, chestnuts and rice. Serve any time of year, or make Thanksgiving special with this stuffing.

Ingredients
- 3 pounds lean ground beef
- 3/4 pound chestnuts, quartered
- 1 to 2 large onions
- 1 1/2 sticks of butter
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon cinnamon
- 5 tablespoons milk
- 1 cup pine nuts
- 3 medium to large apples, cubed
- 2 cups chicken broth
- 1 1/2 cup rice, Carolina brand, uncooked

Step 1
In a large pot (think spaghetti), soften the onions with the butter over medium heat. Add the ground beef and cook until brown. Add all the other ingredients; bring to boil and simmer until the liquid is absorbed (and the rice is cooked). Cover pot (but not fully) with lid.
