Step 1

Soak rice in cold water for 3 hours or better if overnight. Drain rice and place in vegetable steamer in a large pot. Fill bottom of pot with water and cover. Bring water to a boil and steam rice for 4- to 60 minutes. In a small saucepan, combine coconut milk with sugar and salt. Simmer until sugar is dissolved; stirring occasionally. Remove from heat and set aside. Place warm, cooked sticky rice into a large bowl. Pour coconut mixture over rice; stir well to combine. Let rice mixture sit for 30 minutes to 1 hour to absorb the coconut milk. Cut 4 to 6 ripe mangos into small slices. Serve coconut stick rice on plates garnished with mango slices. Makes about 5 cups of sticky rice.
