1. Preheat oven to 400. Warm stock, saffron, and 1/2 teaspoon salt in a saucepan over medium heat
- 4 cups chicken stock
- 1/2 teaspoon ground saffron
- Coarse salt and freshly ground pepper
- 8 skin on chicken thighs or breasts
- 1 teas pimenton (smoked spanish paprika)
- 2 teaspoons extra virgin olive oil
- 12 ounces dried chorizo, sliced 1/8 inch thick on the bias
- 1 white onion, coarsely choppe
- 4 garlic cloves, minced
- 3 medium vine ripe tomatoes, coarsely chopped
- 2 1/2 cups arborio rice
- 1 cup fresh shelled english peas

1. Sift together first 6 ingredients into a large bowl
- FOR PANCAKES:
- 2 cups all purpose flour
- 1 cup powdered sugar
- 1/2 cup unsweetened cocoa
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups buttermilk
- 2 large eggs
- 1/2 cup granulated sugar
- 2 tbsp red liquid food coloring
- FOR BUTTER:
- 8 oz crem cheese softened
- 1 cup butter softened
- 3 cups powdered sugar
- 1 tsp vanilla extract

- 2 cups confectioner's sugar
