Meat and Veggie Lover's Deep-Dish Pizza

PREPARE PIZZA DOUGH: 1
- For Semolina Pizza Dough:
- 1 1/2 cups warm water
- 1 1/4 oz package active dry yeast
- 1 teaspoon sugar
- 1/2 cup olive oil, plus more for the bowl
- 1/2 cup semolina flour
- 3 1/2 cups unbleached all purpose flour, plus more for dusting the work surface and your hands
- 1 1/4 teaspoons salt
- FOR PIZZA:
- 1/4 cup plus 2 teaspoons olive oil
- 1 cup chopped onion
- 1 tablespoon minced garlic
- 1/2 teaspoon fennel seeds
- 1 sprig fresh thyme
- 1 sprig fresh oregano, plus 1/4 cup chopped fresh leaves
- 1/2 teaspoon salt
- 1/4 teaspoon feshly ground black pepper
- 1 28oz can whole tomatoes, coarsely crushed, with juice
- 1 tablespoon dry red wine
- 1 1/2 teaspoons sugar
- 1 15oz can tomato puree
- 1 lb fresh hot italian sausage, removed from casings and crumbled
- 8 oz mushrooms, stemmed and sliced
- All purpose flour
- 1 lb good quality low moisture or part skim mozzarella cheese, grated (about 4 cups)
- 8 oz pepperoni, sliced
- 1 green bell pepper, cut into thin strips
- 1/2 cup sliced pitted kalamata or other favorite olives
- 1/2 cup chopped fresh basil leaves
- 1 lb fresh mozzarella cheese, cut into 1/4 inch thick slices
- 4 oz parmigiano-reggiano cheese, finely grated
Tamale Masa Dough

- 6 3/4 cups masa
- 3 tblsp salt
- 6 3/4 cups (about) low-salt chicken broth, warmed
- 1 1/2 pound lard

FOR CUPCAKES: 1. Preheat the oven to 325
- FOR CUPCAKES:
- 1 cup all purpose flour
- a scant 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- a pinch of salt
- 3 tblsp unsalted butter, at room temperature
- 1/2 cup whole milk
- 1 egg
- 1/4 teas pure vanilla extract
- 14oz can sliced peaches
- light brown sugar for garnish
- FOR FROSTING:
- 2 cups confectioners' sugar sifted
- 5 tblsp unsalted butter, at room temp.
- 2 tblsp whole milk
- a couple of drops of pure vanilla extract
Crawfish Cornbread

Lightly boiled shrimp could easily be subsituted for the crawfish
- 2 cups yellow cornmeal
- 3 eggs, slightly beaten
- 1 (14oz) cans cream style corn
- 1 1/2 cups grated cheddar cheese
- 3 teaspoons baking powder
- 2 jalapeno peppers, seeded and chopped fine
- 1/2 cup bell peppers, chopped fine
- 1/2 teaspoon baking soda
- 1 onion, chopped fine
- 1/2 cup cooking oi
- 3/4 cup chopped green onions
- 1 cup milk
- 1 lb cleaned crawfish tails
Coconut Icing

In a medium saucepan, combine butter, evaporated milk, and sugar
- 1 cup butter
- 1 (5oz) can evaporated milk
- 1 1/2 cups sugar
- 1 teas vanilla extract
Jalapeno Popper Dip

Cook bacon in a small saute pan until almost brown
- 3 slices bacon, diced (I used turkey bacon)
- 2 jalapenos, seeded and diced
- 2 (8-ounce) packages cream cheese, softened (light or Neufchâtel will work just fine)
- 1/2 cup plain Greek yogurt
- 1 cup shredded Mexican blend cheese
- 2 (4-ounce) cans green chilies
- 1 teaspoon garlic powder
- 1 tablespoon Frank's Red Hot
- 3/4 cup plain breadcrumbs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded parmesan cheese
- 1/4 cup shredded Mexican blend cheese
- 1/2 stick (4 tablespoons) butter, melted

- Vegetable shortening for pan
- 1 (12oz) package miniature peanut butter cups
- 2 sticks unsalted butter
- 4 1/2 oz unsweetened baking chocolate
- 1 1/2 cups 60% cacao bittersweet chocolate chips
- 6 large eggs at room temperature
- 1 1/2 cups granulated sugar
- 1 1/2 packed cups light brown sugar
- 1 teaspoon salt
- 1 tablespoon vanilla extract
- 1 1/2 cups bleached all purpose flour
- 3/4 teaspoon baking powder
- 2 tablespoons coarsely chopped salted peanus
- 1/4 cup milk chocolate chips
Orange Cranberry Bread

- 1 1/4 cup orange juice room temperature
- 1 tablespoon butter
- 1 teaspoon orange zest
- 3/4 cup cranberries (I use craisins)
- 3 1/4 cups bread flour
- 1 teaspoon salt
- 1 1/2 tablespoon sugar or honey
- 2 teaspoons yeast
Dulce De Leche Frozen Yogurt

To make the dulce de leche, preheat the oven to 400
- 2 (14oz) cans sweetened condensed milk
- 1/4 teaspoon salt
- 2 cups Greek style plain whole milk yogurt
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
