  • 1/2 cup olive oil, plus more for the bowl
  • 1/2 cup semolina flour
  • 3 1/2 cups unbleached all purpose flour, plus more for dusting the work surface and your hands
  • 1 1/4 teaspoons salt
  • FOR PIZZA:
  • 1/4 cup plus 2 teaspoons olive oil
  • 1 cup chopped onion
  • 1 tablespoon minced garlic
  • 1/2 teaspoon fennel seeds
  • 1 sprig fresh thyme
  • 1 sprig fresh oregano, plus 1/4 cup chopped fresh leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon feshly ground black pepper
  • 1 28oz can whole tomatoes, coarsely crushed, with juice
  • 1 tablespoon dry red wine
  • 1 1/2 teaspoons sugar
  • 1 15oz can tomato puree
  • 1 lb fresh hot italian sausage, removed from casings and crumbled
  • 8 oz mushrooms, stemmed and sliced
  • All purpose flour
  • 1 lb good quality low moisture or part skim mozzarella cheese, grated (about 4 cups)
  • 8 oz pepperoni, sliced
  • 1 green bell pepper, cut into thin strips
  • 1/2 cup sliced pitted kalamata or other favorite olives
  • 1/2 cup chopped fresh basil leaves
  • 1 lb fresh mozzarella cheese, cut into 1/4 inch thick slices
  • 4 oz parmigiano-reggiano cheese, finely grated
