Orange-Cranberry Bread

1. Preheat oven to 350. Grease and flour 10 inch tube pan; set aside
- FOR GLAZE:
- 1 Tube Pan
- 2 1/4 cups all purpose flour
- 1 1/2 cups rolled oats
- 1 tblsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp. salt
- 3/4 cup butter, softened
- 1 cup sugar
- 3 eggs
- 1 cup milk
- 2 cups fresh cranberries, chopped
- 2 tblsp sugar
- 2 tsp finely shredded orange peel
- 1 cup powdered sugar
- 1/2 teas finely shredded orange peel
- 2 -3 teas orange juice

- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/4 teapsoon ground nutmeg
- pinch ground cloves
- 1/2 teaspoon salt
- 2 eggs
- 1/3 cup granulated sugar
- 3/4 cup milk
- 1/2 cup molasses

Icebox Banana Cheesecake

FOR CRUST: 1. Roughly break up the graham crackers and put them in a food processor
- FOR CRUST:
- 6 1/2 oz graham crackers
- 1 stick plus 2 tblsp unsalted butter, melted
- FOR CHEESECAKE:
- 1 1/2 envelopes granulated gelatin
- 1 cup mashed banana, plus extra sliced bananas to decorate
- 1/3 cup orange juice
- 10 oz cream cheese
- 1/2 cup sugar
- 3 egg yolks
- 1 cup heavy cream
Pistachio Bundt

1. Preheat oven to 350. Prepare a 12 cup bundt pan using butter and flour or baker's joy and set aside
- 1 box (18oz) yellow cake mix
- 1 small box instant pistachio pudding mix
- 4 eggs
- 3/4 cup orange juice
- 1/2 cup vegetable oil
- 1 cup drained crushed pineapple
- 1/2 cup coconut
Crawfish Etouffee

- 1 stick of margarine or butter
- 3 cloves of garlic, medium chopped
- 1 green bell pepper, medium chopped
- 2 stalks of celery, medium chopped
- 1 1/2 cup sof white onion, medium chopped
- 1/4 cup of tomato paste
- 2 tblsp of all purpose flour
- 1 lb of Louisiana crawfish tails
- 1/2 tsp of chili powder
- 1 tblsp of fresh squeezed lemon juice
- 1/2 tsp of dry basil
- 1/4 tsp of dry thyme
- 1 cup of water
- 1 tsp of salt
- 1/4 tsp of black pepper
- 1/8 tsp cayenne
- 3 scallions, medium chopped
- 1/4 cup of parsley, finely chopped

1. Combine 1/2 cup warm water, the yeast, and 1 tblsp of the sugar in a small bowl
