- 10 whole (to 14) Corn Tortillas
- 1/2 cup Canola Oil

- TO ASSEMBLE:
- 3 cups Grated Sharp Cheddar Cheese

- 1/2 cup Chopped Cilantro
Bacon Parmesan Stuffed Mushrooms

Pre-heat your oven to 350 degrees
- 12 ounces button mushrooms (about 15-20 mushrooms)
- 1- 8 ounce package cream cheese, softened and cut into cubes
- 1/4 cup finely grated parmesan cheese, plus some for garnish
- 4 strips bacon, cooked and crumbled
- 1/4 teaspoon red pepper flake
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried parsley
- 1-2 garlic cloves, minced
- A squeeze of lemon juice
- 1 tablespoon olive oil
Easy Pesto Asparagus Quinoa

Cook the quinoa with the vegetable broth according to package directions (so use broth instead of water)

- 2 Cups Vegetable Broth
- 1 Cup Pesto
- 1 1/2 cups Grape tomatoes
- 2 cups Asparagus, trimmed and chopped into 1-2" pieces

Here's a great scalloped potato recipe that's so easy and absolutely delicious
- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese, to sprinkle on top

Since fall has started I've been obsessed with all things pumpkin, including pumpkin ice cream and frozen yogurt
- 1/2 cup pumpkin (canned or freshly cooked)
- 1/2 frozen banana
- 3/4 cup almond milk
- 1/2 scoop (or approx. 2 T) vanilla protein powder
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- pinch of ground ginger
Bacon, Egg and Cheese Ring

I came across this recipe on Pinterest, and I just had to make it
- 'Bacon Egg and Cheese Ring
- Ingredients
- 1 can of crescent rolls
- 5 large eggs; scrambled
- 1 cup of shredded Colby and Monterrey jack cheese
- 8 slices of cooked bacon, or crumbled cooked sausage
- 1 teaspoon of season salt
- Directions
- 1 . Heat oven to 375 degrees. Scramble eggs on stove top. Lay out crescents
- on a parchment lined pizza pan in a star formation (the longer sides of each crescent on the inside with the pointed ends pointing out.)
- 2 . Place cooked bacon around the inside center of the ring. Top with about 1/3 of the cheese, scrambled eggs, season salt (or whatever seasoning you're using), and remaining cheese.
- 3 . Fold pointed tips of each crescent over the filling and join in the center of the ring. Press all the points in the center down to seal them together.
- 4 . Place in oven and bake for 15-17 minutes, or until golden brown. Slice in between each crescent to make 8 individual pieces.

- 1 pound ground italian sausage or ground beef
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flake
- 3/4 teaspoon garlic powder
- 1- 8 ounce package cream cheese, softened
- 3/4 cup sour cream
- 1 teaspoon Italian Seasoning
- 3 scallions, chopped (reserve a few for garnish)

- 1 cup monterrey jack cheese
