Baked Chicken Flautas

Pre-heat your oven to 425 degrees and line a large rimmed baking sheet with parchment paper
- 2 cups shredded cooked chicken
- 1 – 14 ounce can black beans, rinsed and drained
- 1- 14 ounce can corn, drained
- 1/2 tablespoon olive oil
- 1/2 of a red bell pepper, diced
- 1/2 of a small yellow onion, diced
- Salt, black pepper
- 1/2 cup salsa (here’s my recipe for Classic Salsa)
- 1/4 cup sour cream
- 1 cup Monterrey Jack Cheese
- 12-14 Flour tortillas ( I used soft taco sized tortillas)

This happens to me almost everyday
- 4 burgers, you need:
- 1 1 70% 60%.) ground beef (I used 70% lean. Better is 60%.)
- Salt and pepper for seasoning
- 1 1 1 tablespoon worcestershire sauce
- Lettuce
- Tomato, sliced
- 4 4 4 or more slices of cheese (I used Kraft's American cheese)
- Special Pink Sauce (recipe below)

- 1/2 1/2 1/2 cup mayonaise (Hellman's mayonaise are gluten free)
- 1/4 1/4 1/4 cup ketchup (Heinz Ketchup is gluten free)
- 1/4 1/4 1/4 cup relish (gluten free)
- 1/8 1/8 1/8 teaspoon (a pinch) salt
- 1/8 1/8 1/8 teaspoon (a pinch) sugar
- 1/8 1/8 1/8 teaspoon (a pinch) onion powder
- 1/4 1/4 1/4 teaspoon (2 pinches) garlic powder
- 1/2 1/2 1/2 tablespoon worcestershire sauce

Instructions Place oven rack in upper-middle position of oven and heat oven to 500 degrees

This Peanut Saute is my personal version of the “Indonesian Peanut Saute” from Noodles & Co
- PEANUT SAUCE:
- 1 1/2 pounds chicken, cut into thin strips
- Vegetable oil
- 1 tablespoon Sriracha chili sauce
- 1 lime, juiced
- 3 cloves garlic, pressed
- 1 tablespoon fresh ginger, minced
- 4 shakes soy sauce
- Salt and pepper, to taste
- 1 (16 ounce) package linguine noodles
- Shoestring carrots
- Broccoli florets, chopped
- Green onion
- Bean sprouts
- Peanuts
- 2 limes, sliced

- 6 tablespoon creamy peanut butter

Avocado Bacon Egg Rolls
