Southwestern Cobb Salad

- 1 teaspoon honey
- 3/4 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder

Tuna-Biscuit Casserole

A warm and tasty way to use tuna
- 1/3 cup chopped green peppers
- 3 Tbs chopped onion
- 1 Tbs Olive Oil
- 1 can cream of chicken soup or 1 can cream of mushroom soup
- 1-1/2 C milk
- 2 sm. cans or 1 lg. can tuna
- 1 tsp lemon juice
- 1 box of Bisquick
- 1 8 oz package shredded sharp cheddar cheese

Dry brined turkey, with added herbs and spices to the salt -- you can also dry brine a frozen bird as it's defrosti...
- 15 to 18-pound 15 to 18-pound to 18-pound fresh turkey (frozen also works but takes a day longer). For larger birds increase the proportions accordingly. Increase cooking time as needed.
- Kosher salt
- to and/or spices to flavor the salt (you can omit if you wish but the flavor is great)
- Melted butter for basting (optional)

- 6 medium bell peppers, tops removed and reserved, and seeds removed
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 1 large carrot, peeled and diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 8 ounces lean (90 percent) ground beef
- 1 teaspoon salt
- 1 teaspoon pepper

A spicy blend that lends itself to a variety of dark meats
- 1 1 1 yellow onion
- 3 3 3 lbs. hamburger (or venison burger or ground pork or ground turkey, etc. )
- 1 1 10 – 10 oz. can each of Original Rotel, Rotel Chili Fixings, Rotel Lime & Cilantro
- 2 2 2 cans diced green chili’s
- 1 1 7oz. – 7oz. can Marcos chipotle salsa
- 1 1 14oz. – 14oz. can diced tomatoes, no salt, with basil, garlic and oregano
- 2 2 2 cans pinto beans
- 1 1 1 can red kidney beans
- 1 1 1 can small red beans
- 2 2 2 TBSP Mexican oregano
- 2 2 2 TBSP ground cumin
- 3 3 3 TBSP corn starch
- 3 3 3 cups water
- Large Large soup pot (8 qts )
Roasted Fish and Veggies with Quinoa and Pine Nuts

Preheat oven to 400°F and line a 9x13-inch baking pan with parchment paper
- 2 carrots, cut into 2-inch sticks
- 1 large yellow bell pepper, cut into strips
- 1 1/2 cup grape tomatoes
- 1 red onion, halved and thinly sliced
- 3 garlic cloves, finely chopped
- 1/4 teaspoon fine sea salt, divided
- 4 (3-ounce) pieces mild white fish fillet such as tilapia or flounder
- 1 lemon, Zest and juice of
- 1 cup quinoa, cooked according to package directions
- 3 tablespoons chopped cilantro
- 3 tablespoons toasted pine nuts, chopped
