Chicken and Vegetable Lo Mein

Heat wok or skillet over high heat
- Serves: 4–6
- Ingredients
- 1 Tbsp Sesame Oil, toasted
- 1 Tbsp Garlic, minced
- 1 Tbsp Ginger Root, minced
- 1 lb Chicken Breast, Skinless , cubed
- 1/2 cup Water Chestnuts
- 2 cup Broccoli, chopped
- 1/2 cup Shiitake Mushrooms, stems removed and cut in half
- 1/4 cup Almonds, chopped
- 1/4 cup Celery, chopped
- 1/4 cup Green Onion, chopped
- 2 cup Shredded Green Cabbage
- 1/4 cup Raw Coconut Aminos
- 1 tsp Sesame Seeds
Cucumber and Tomato Salad

1. Rinse and peel cucumber
- 2 cups cucumber
- 2 cups grape tomatoes
- 1 cup kalamata olives
- 1 Tb fresh basil
- 1 Tb fresh oregano
- 1 clove garlic, minced
- 2 Tb evoo
- 2 Tb balsamic vinegar
- Cracked black pepper to taste
White Chocolate Cream Cheese Frosting

- 9 oz. bakers white chocolate
- 12 oz. cream cheese (softened)
- 6 oz. unsalted butter
- 1 1/2 tbsp. lemon juice
Zucchini Pie ***

This is a recipe I found the summer we were over-run by zucchini
- Crust:
- 1-8 oz tube of crescent rolls
- 2 ts yellow mustard
- Filling:
- 4 cups sliced zucchini
- 1 cup chopped onion
- 1/2 cup margarine
- 1/2 cup fresh parsley(2T dried)
- 1/2 ts salt
- 1/2 ts pepper
- 1/4 ts garlic powder
- 1/4 ts dry oregano
- 1/2 ts dry basil
- 2 eggs
- 2 cups shredded mozzerella cheese
Brownies w/ Choc Cream Chs Frosting****

Preheat oven to 350 degrees
- Brownie:
- 1 1/2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1/4 tsp baking powder
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 3/4 cup packed light-brown sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 3 Tbsp milk
- Frosting:
- 5 oz cream cheese
- 3 T butter
- 1/2 tsp vanilla
- 2 cups 10x sugar
- 1 1/2 T cocoa
Snickerdoodle Blondies****

Preheat oven to 350F. Lightly grease a 9 x 13 inch pan
- 2 2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon Kosher salt
- 2 cups packed brown sugar
- 1 cup butter, at room temperature
- 2 eggs, at room temperature
- 1 tablespoon vanilla extract
- 2 tablespoons white sugar
- 2 teaspoons cinnamon

Pumpkin Brownies with Pecans

Preheat oven to 350F. Lightly grease an 8×8-inch baking dish
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground allspice
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1 large egg
- 1/2 cup pumpkin puree
- 3/4 cup all purpose flour
- 2/3 cup chopped pecans
Sweet and Sour Chicken****

- The chicken coating:
- 3-4 boneless chicken breasts
- salt + pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup canola oil
- The sweet and sour sauce:
- 3/4 cup sugar
- 4 tbs ketchup
- 1/2 cup distilled white vinegar
- 1 tbs soy sauce
- 1 tsp garlic salt
Caramel Pecan Bars- Paleo

Preheat your oven to 375 degrees
- For the crust:
- 1.5 cups pecans
- 3/4 cup almond flour/meal
- 1/4 cup Gold Label Virgin Coconut Oil, melted
- 1 egg, whisked
- 1 tablespoon Raw Honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- pinch of salt
- For the caramel:
- 12-14 medjool dates, pitted and soaked in water for an hour
- 5-6 tablespoons canned coconut milk
- 3 tablespoons water
- 1 teaspoon vanilla extract
- pinch of salt
