Chilled Peanut Soba Noodles

Bring a large pot of water to a boil; overt high heat
- Kosher salt
- 8 ounces soba (buckwheat) noodles
- 1/4 cup natural crunchy peanut butter
- 1/4 cup seasoned rice vinegar
- 1 tablespoon soy sauce
- 2 to 3 teaspoons chili sauce (recommended: Sriracha)
Linguine and White Clam Sauce*****

-Over a med-high heat, melt butter in large sauté pan
- 4 Tb butter
- 2 cloves garlic, pressed/minced
- 2 Tb flour
- 1 cup half-n-half
- 2 cans minced clams w/ liquid
- 1 chicken bouillon
- 1/4 tsp onion powder
- 1/2 tsp thyme
- 4 Tb fresh parsley (2tsp dry)
- White Wine- optional
- S&P
- 1 # linguine pasta- prepared according to package
- Shredded Parmesan Cheese
- Fresh Parsley for garnish
Tomato Basil Soup***

-Saute onion and garlic in olive oil
- 1 tsp olive oil
- 1/2 c chopped onion
- 1 tsp chopped garlic
- 2 28oz cans crushed tomatoes
- 3 cups chicken broth
- 3/4 cup heavy cream
- 1/3 cup basil
- 1/3 cup sugar
- 2 tsp parsley
- 1/4 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
Red Potatoes w/ Artichoke Hearts ****

Much more appealing when done with red potatoes
- 2 # red potatoes
- 2 cans Artichoke Hearts
- 1 cup mayonnaise
- 1 cup Parmesan
Cheddar Broccoli Rice Cups

Prepare rice as directed on package, substituting stock for water
- 1 cup quick-cooking rice (like Minute Rice)
- 1 cup chicken stock
- 1 10-oz. box frozen, chopped broccoli, thawed and excess water squeezed out
- 1/2 & 1/4 cups shredded cheddar cheese, divided
- 1/4 cup Homemade Ranch Dressing, or store bought
- 2 eggs, lightly beaten
- 1/2 teaspoon salt and freshly ground pepper to taste
Pickled Cucumber and Daikon Salad

Directions In a large bowl combine the carrots, cucumbers and daikon
- Ingredients:
- 2 carrots, julienned
- 1 hothouse cucumber, sliced thinly, preferably on a mandoline
- 1 medium daikon radish, peeled, sliced in half lengthwise and sliced into thin half-moons, preferably on a mandoline
- 3/4 cup rice wine vinegar
- 1/4 cup fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon sambal oelek
- 1 teaspoon grated ginger
- 1 clove garlic, smashed and finely chopped
- 2 scallions, sliced thinly on the bias
Parmesan Crusted Zucchini Rounds

- 1-2 sliced zuccini
- 1/2 cup olive oil
- 1/8 tsp garlic powder
- 1/4 tsp freshly ground black pepper
- 1 c parmesan cheese grated
Tomato Almond Pesto****

1 In a skillet over medium heat, toast the almonds until they are slightly browned and fragrant, about 5 minutes
- 3/4 cup almonds
- ~14 ounces crushed tomatoes
- 1 clove garlic
- 1 tablespoon paprika
- 1 tablespoon balsamic vinegar
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 1/4 cup olive oil
Donna's Layer Salad*****

-Layer salad ingredients in order given
- Salad:
- Ice berg lettuce
- Broccoli chopped
- Cauliflower chopped
- Green onion chopped
- Dressing:
- 1 cup mayonnaise
- 1/2 cup or less sugar
- 1 # bacon- cooked and crumbled
- 1/4 cup Parmesan cheese
- this salad can also be made with cheddar and green peas...we prefer it the way the recipe is written.
Peanut Butter Squares*****

- Peanut Butter Layer:
- 2 cups Peanut Butter
- 1/2 cup melted margarine
- 2 3/4 cups 10x sugar
- 1 cup crushed graham crackers
- (1 pkg, less 2 crackers)
- Chocolate Ganache:
- 2 cups milk chocolate chips
- 3/4 cup Heavy Cream
