Cheddar Cottage Pie

Cheddar Mashed Potatoes: In large saucepan of boiling salted water, cook potatoes until tender, about 10 minutes
- Cheddar Mashed Potatoes:
- 1 tbsp (15 mL) vegetable oil
- 1 onion, diced
- 2 large carrots, peeled and diced
- 2 cloves garlic, minced
- 1 lb (454 g) lean ground beef
- 1/2 tsp (2 mL) dried thyme
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
- 2 tbsp (30 mL) tomato paste
- 1-1/3 cups (325 mL) sodium-reduced beef broth
- 1 tbsp (15 mL) Worcestershire sauce
- 2 lb (907 g) boiling potatoes, (4 or 5), peeled
- 1 cup (250 mL) milk
- 1 cup (250 mL) shredded extra-old Cheddar cheese

The Starter: Mix the starter ingredients in a small bowl, cover, and let rest at room temperature overnight
- Overnight Starter
- 3/4 cup King Arthur Unbleached All-Purpose Flour
- 1/2 cup lukewarm water
- 1/8 teaspoon instant yeast
- Dough
- 2 teaspoons instant yeast
- 2/3 cup water
- 2 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1 1/4 teaspoons salt

General Tso's Chicken

- Marinade:
- 1 pound boneless, skinless chicken thighs, sliced into 1-inch cubes
- 1 1/2 cups cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 cups peanut or vegetable oil for frying, plus 1 tablespoon for stir-frying
- 8 dried whole red chilis, or substitute 1/4 teaspoon dried red chili flakes
- 2 cloves garlic, minced
- 1 teaspoon white sesame seeds, for garnish
- Scallions, green parts thinly sliced, for garnish
- 1 tablespoons soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 2 egg whites
- Sauce:
- 1/4 cup chicken stock, or substitute water
- 1 1/2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon hoisin sauce
- 1 teaspoon chili paste
- 1 teaspoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon cornstarch

- 2 cups old fashioned oats
- 2 cups all purpose flour
- 1 tablespoon baking powder
