Italian Sausage Soup

Remove sausage from casing and lightly brown in a frypan
- 1/2 lb Italian Sausage
- 2 tblsp olive oil
- 1 onion, chopped
- 1 garlic clove, minced
- 1/2 cup each, chopped celery, carrot & red pepper
- 1 can(19oz/540ml)canned tomatoes, chopped
- 2 tsp parsley flakes
- 1/2 tsp dried basil
- pinch dried leaf thyme
- 1 bay leaf
- 4 cups chicken stock
- 1/2 cup small pasta shells, uncooked
- 1 can(14oz/398ml)red kidney beans, drained
- salt & pepper to taste
Rosemary Raisin Pecan Crisps

Preheat oven to 350° F. In a large bowl, stir together the flour, baking soda and salt
- 2 cups flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 cups buttermilk
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 cup raisins
- 1/2 cup chopped pecans
- 1/2 cup roasted pumpkin seeds (optional)
- 1/4 cup sesame seeds
- 1/4 cup flax seed, ground
- 1 Tbsp. chopped fresh rosemary

Place finely chopped pecans in a shallow dish and set aside
- 4 (8 ounce) packages cream cheese, softened
- 4 cups shredded sharp cheddar cheese
- 1 1/2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 2 teaspoons dried parsley
- 1/4 teaspoon pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot pepper sauce
- 1 cup pecans, finely chopped for rolling
Rainbow Jello Recipe

- 5 small packages of Jello (I used cherry, grape, blueberry, lime and lemon)

Sun-Dried Tomato and Almond Pesto

If you can find dry-packed sun-dried tomatoes, use them in place of the oil-packed version
- 1/2 cup (125 mL) slivered almonds
- 2 cloves garlic
- 1 cup (250 mL) drained oil-packed sun-dried tomatoes
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
- 1/3 cup (75 mL) extra-virgin olive oil

- 2 cups sliced rhubarb
- 2 cups halved strawberries
- 1-1/4 cups sugar
- 1/4 cup Minit Tapioca
- 1 pkg. (425 g) ready-to-use refrigerated pie crusts (2 crusts)
- 1 Tbsp. non-hydrogenated margarine

- 2 tablespoons butter

- 1-1/2 teaspoons salt

- 3 tablespoons lemon juice
- 8 cups sliced peeled tart apples
