Peanut Butter Fudge

Cook sugar and milk in a large saucepan to soft ball
- 2 cups sugar
- 1 cup milk (I use skim with great results)
- 1 1/2 cups creamy peanut butter (we also like crunchy)
- 2 cups marshmallow creme
- 1 teaspoon vanilla

To make the batter, put the flour, sugar and salt in a bowl
- 125 g plain flour
- 15 g sugar
- Pinch of salt
- 2 large eggs
- 325 ml milk
- 100 ml 35% whipping cream
- Few drops of vanilla extract or zest of orange or lemon for flavoring
- 20 g of clarified butter or non stick spray to cook
Pasta and Bean Soup (Fagioli)

This classic Italian soup is a medley of vegetables, beans and pasta
- 2 tsp vegetable oil
- 1 tsp dried oregano
- 1/2 cup chopped onion
- dash of salt and freshly ground black pepper
- 1/3 cup chopped carrot
- 3 cups canned red kidney beans, drained and rinsed
- 1/3 cup chopped celery
- 1/2 cup elbow macaroni or small shell pasta
- 2 tsp minced fresh garlic
- 3 Tbsp grated Parmesan cheese
- 3 1/2 cups vegetable or chicken stock
- 1/4 cup chopped fresh basil or parsley
- 1 can whole tomatoes (19 oz)
- 1 1/2 tsp dried basil
- 2 tsp granulated sugar
Beer-Braised Pot Roast

Brown the meat and aromatics: Set a rack on the lower third of the oven and heat the oven to 300°F
- 2 cloves garlic, smashed
- 2 sprigs fresh sage (or 1/2 tsp. dried)
- 5 whole black peppercorns
- 1 4-lb. boneless beef chuck pot roast
- Kosher salt and freshly ground black pepper
- 2 Tbs. vegetable oil
- 5 oz. thick-sliced (1/4 inch) bacon, cut into 1/2-inch squares (to yield 1 cup)
- 1-1/2 cups finely chopped onions
- 1/4 cup balsamic vinegar
- 1-1/2 cups beer or ale
- 1-1/2 cups homemade or low-salt chicken or beef broth
- 2 cups peeled, diced carrots (3/4-inch chunks)
- 2 cups peeled, diced parsnips (3/4-inch chunks)
- 2 cups peeled, diced rutabagas (3/4-inch chunks)
- 1 Tbs. Dijon mustard or prepared horseradish
Oven Roasted Bacon

Preheat oven to 400 degrees Fahrenheit
- 8 -10 slices centre cut apple-smoked bacon

- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt

Honey Spice-Rubbed Pork Tenderloin

- 1 pork tenderloin (1 lb./450 g)
- 1/4 cup Kraft Catalina Dressing, divided
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. dry mustard

- 1/4 tsp. dried thyme leaves

For a really good and satisfying breakfast mix some of this healthy granola with plain yogurt
- 4 cups old-fashioned rolled oats
- 2 1/2 cups sliced almonds (1/2 lb)
- 1 cup chopped pecans
- 1 1/2 cups sweetened flaked coconut
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup honey
- 1/2 tsp vanilla
- 1 cup dried cranberries (5 oz)
- 1 cup golden raisins (5 1/2 oz)
- 1/2 cup dried blueberries

Sprinkle gelatin over cold water in saucepan; let stand 1 minute to soften
- 1 pkg unflavoured gelatin
- 1/4 cup cold water
- 2 cups strawberries, hulled & sliced
- 1/4 cup granulated sugar
- 1 cup heavy cream, chilled
- 3 tblsp confectioners' sugar
- whole strawberries for garnish
