I came upon this recipe years after one of our kids brought it home from school and gave it a try
- 1/2 cup (125mL) rice
- 2 cups (500mL) hot water
- 1/2 cup (125mL) chopped tomatoes
- 1 tsp. (5mL) salt
- 1/4 cup (60mL) finely sliced onion
- 1/4 cup (60mL) finely sliced green pepper
- 1/4 cup (60mL) melted butter
- 2&1/2 tsp (12mL) curry powder
