Thai Quinoa Salad

This is my variation of a Campbell's recipe that was in our local Sobeys grocery store flyer
- SALAD:
- 2 cups quinoa
- 4 cups Campbell's® Ready to Use Vegetable Broth
- 2 1/2 cups red cabbage, shredded
- 2 cups carrots, julienned (matchsticks)
- 1/2 cup cilantro, chopped
- 4 to 5 leaves Thai basil, minced
- 1/2 cup green onion, cut at a bias
- 1/2 cup unsalted peanuts, roasted and chopped
- 4 to 6 lime wedges for garnish
- DRESSING:
- 2 limes, juiced
- 1/4 cup all natural peanut butter
- 3 tablespoons tamari
- 2 tablespoons honey
- 1 teaspoon toasted sesame oil
- 1 teaspoon olive oil
- Water to thin
Garlic Roasted Chicken and Potatoes

Chicken and potatoes bake in butter with 24 cloves of garlic and a little maple syrup at the end for sweetness
- 1/4 cup butter
- 6 chicken leg quarters, split into drumsticks and thighs
- 6 large Yukon Gold potatoes, cut into chunks
- 24 cloves garlic, unpeeled
- salt and ground black pepper to taste
- 1/4 cup maple syrup
Oatmeal Dinner Rolls

This is a favourite recipe which we found in the Nov
- 2 c. water
- 1 c. dry quick oats
- 3 Tbsp. butter or margarine
- 1 pkg. dry yeast
- 1/3 c. warm water
- 1/3 c. packed brown sugar
- 1 Tbsp. sugar
- 1 tsp. salt
- 4 3/4-5 1/4 c. flour
Strawberry Delight Cake

Grease 9"x9" pan; add marshmallows
- 1 c. mini marshmallows
- 1/2 c. margarine
- 1 1/2 c. sugar
- 2 eggs
- 2 1/4 c. flour
- 3 tsp. baking powder
- 1 c. milk
- 1 pack strawberry Jello
- 2 &1/2 cups strawberries
- 1 c. whipping cream, whipped (sweetened, if desired)
Italian Spaghetti Sauce

Brown hamburg, add onion, celery and green pepper and cook 5-10 minutes
- 1 lb hamburg
- 1 large onion
- 2 stalks celery
- 1 green pepper
- 28 oz can tomatoes
- 10 oz can mushrooms
- 5 oz can tomato paste
- 7 oz can tomato sauce
- 2 tsp chili powder
- pepper, to taste
- 1/2 tsp steak spice
- 1 tsp oregano
- 2 tsp vinegar
- 1/4 cup red wine, optional
- 1 tsp Worcestershire sauce
- 1 tsp dry mustard
- 2 Tbsp brown sugar
- 1/4 cup barbecue sauce, optional

Mix tomato sauce, Italian seasoning and garlic salt in 2 cup measure
- 8 8 8 oz. tomato sauce
- 1 1 1 tsp. Italian seasoning
- 1/4 1/4 1/4 tsp. garlic salt
- 1/3 1/3 1/3 c. corn flake crumbs
- 1/4 1/4 1/4 c. grated Parmesan cheese
- 1 1 1 tsp. parsley flakes
- 2 2 2 lg. boneless chicken breasts
- 1 1 1 beaten egg
- 1/2 1/2 1/2 c. shredded Mozzarella cheese

- 1 c. quick cooking oats
- 1 c. buttermilk
- 1/3 c. brown sugar
- 1/3 c. applesauce
- 1/4 c. molasses
- 2 eggs
- 1 1/3 cups all-purpose flour
- 1 tsp. baking soda

Heat oven to 375 deg.F (190 deg
- 2 pork tenderloins (10oz./300g each)
- 1 Tbsp. butter or vegetable oil
- 3 apples, peeled, cored, and sliced
- 1 can (10oz./284mL) Campbell's Onion Soup (Substitution: Dice 1 large onion and saute in 1 tsp. butter; slowly add 2 cups broth, water, &/or white wine and simmer until liquid is reduced to 1&1/4 cups)
- 1/2 cup water (if using above substitution, this may be adjusted based on final volume of liquid)
- 1/3 cup apple juice
