- 1/4 cup extra-virgin olive oil
- Pinch hot chile flakes
- 1 clove garlic, minced
- 6 anchovy fillets, roughly mashed with a fork

Quick Bolognese Sauce

Method 1 Heat butter in a large sauté pan on medium high
- 2 tablespoons butter
- 1 1/4 (570g) lbs ground chuck
- 1/2 cup (60g) finely chopped onion
- 1/2 cup (60g) finely chopped celery
- 1/2 cup (60g) finely chopped carrot
- 2 Tbsp tomato paste
- 1/2 cup (118ml) full bodied red wine (optional)
- 1 cup (236ml) whole milk (or low fat milk with a tablespoon of cream)
- 1 cup (236ml) crushed tomatoes

- 2 ounces pancetta (about a 1/4-inch thick slice), cut into a 1/4-inch dice

In a heavy-based 3-qt. saucepan with a tight lid, heat the oil over medium heat

- 1 medium onion, medium diced (1-1/2 cups)
- 1 medium poblano, stemmed, seeded, and finely diced (1/2 cup)
- 4 large cloves garlic, minced (2 Tbs.)
- 1-1/2 tsp. chili powder
- 1 tsp. ground cumin
- 1-1/2 cups long-grain white rice
- 1 tsp. kosher salt; more as needed
- 2-1/2 cups low-salt chicken broth
- 1 14-oz. can diced tomatoes, drained well
- 1 lime
- 1/2 cup coarsely chopped fresh cilantro
- 1 jalapeño, stemmed, seeded, and minced
