- 1 1/4 cups graham cracker crumbs (about 5 ounces)
- 4 tablespoons unsalted butter, melted
- 1/4 cup light brown sugar
- Two 14-ounce cans sweetened condensed milk
- Fleur de sel
- 2 cups heavy cream
- 2 tablespoons confectioners' sugar
Sweet Potato Soufflé with Spiced Pecan Topping

Preheat an oven to 450ºF
- 4 large sweet potatoes, about 3 1/2 lb. total
- Unsalted butter for baking dish, plus 4 Tbs. (1/2 stick) butter, melted
- 4 eggs
- 1/2 cup evaporated milk
- 1/2 tsp. ground cinnamon
- Kosher salt, to taste
- 1/2 cup all-purpose flour
- 1/4 cup firmly packed light brown sugar
- 1 tsp. ground cinnamon
- 1 tsp. galangal powder or ground ginger
- 1/2 tsp. ground vanilla bean
- Pinch of kosher salt
- 6 Tbs. (3/4 stick) cold unsalted butter, cut into 1/4-inch dice
- 8 oz. pecans, roughly chopped

Julia Child's wonderfully scrumptious Reine de Saba cake
- For the Cake:
- 4 ounces or squares semisweet chocolate melted with 2 Tb rum or coffee
- 1/4 lb. or 1 stick softened butter
- 2/3 cup granulated sugar
- 3 egg yolks
- 3 egg whites
- Pinch of salt
- 1 Tb granulated sugar
- 2/3 cup pulverized almonds
- 1/4 tsp almond extract
- 1/2 cup cake flour (scooped and leveled) turned into a sifter
- For the Icing:
- 2 ounces (2 squares) semisweet baking chocolate
- 2 Tb rum or coffee
- 5 to 6 Tb unsalted butter
Garlic Cheddar Quick Bread

- 3 cups all-purpose flour
- 4.5 tsp. baking powder
- 1 cup shredded sharp cheddar cheese
- 1/4 cup sugar
- 1 tsp. garlic powder (could be doubled if you like a lot of garlic)
- 1/2 tsp. Italian seasonings, divided
- 1.5 cups milk
- 1/4 cup vegetable oil
- 1 egg
Whipped Cream

chill a large bowl (stainless steel or glass) and a whisk or mixer beaters for 30 minutes
- 1 cup cold heavy cream
- 1 to 2 tbsp confectioner's sugar
French Onion Salisbury Steak

- 1/4 cup minced fresh parsley
- 2 tbsp minced scallions
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- For the sauce
- 1 tbsp olive oli
- 2 cups sliced onions
- 1 tsp sugar
- 1 tbsp minced garlic
- 1 tbsp tomato paste
- 2 cups low-sodium beef broth
- 1/4 cup dry red wine
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme

- 1 21oz can apple pie filling
- 1 14 oz. package frozen blueberries
- 1 cup sugar, divided
- 1 18.25 oz package white cake mix
- 1/2 c butter or margarine, melted
- 1 Cup chopped walnuts, toasted
- Ice cream or whipped topping

- Dough
- 6 cups (about) all purpose flour
- 1 tablespoon ground cinnamon
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cloves
- 3/4 teaspoon salt
- 11 tablespoons (1 stick plus 3 tablespoons) unsalted butter, room temperature
- 2/3 cup solid vegetable shortening
- 1 cup sugar
- 1 cup mild-flavored (light) molasses
- 1 1/2 teaspoons grated lemon peel
- 1 large egg
- 1/4 cup buttermilk
- 2 teaspoons water
- 1 teaspoon baking soda
- Icing
- 3 cups powdered sugar
- 1 1/2 tablespoons fresh lemon juice
- 1 1/2 teaspoons light corn syrup
- Water
- Food coloring (optional)
