Cheesy Bacon Oven Chips with Chipotle Ranch Sauce

- 1 large, uniformly-shaped russet potato, scrubbed well and sliced into 1/8" rounds*
- cooking spray
- 3/4 C. shredded colby jack or cheddar cheese
- salt & pepper to taste
- 2 T. crumbled bacon (about 2 slices) - I used real bacon bits
- chopped parsley or chives, for garnish (optional)
- Chipotle Ranch Dipping Sauce
- 1 T. ranch dressing
- 3 T. sour cream
- 1/4 t. chipotle chili powder
- 1/8 t. cayenne (adjust more or less depending on how spicy you want).
- 1/8 t. salt
- 1/8 t. garlic powder
- Place all ingredients in a small bowl, and stir to combine. Refrigerate any leftovers.
Angel Hair with Bacon, Brussels Sprouts, and Mushrooms

1 Salt Place a large pot of Salted water over high heat and bring it to a boil
- PANTRY:
- Salt
- Freshly Ground Black Pepper
- Olive Oil; for drizzling
- 1/2 cup Parmesan Cheese; freshly grated
- 1 cup Pasta Water; reserved
- 1 pound Angel Hair Pasta
- 1/2 pound thick sliced Bacon; cut in to Lardons
- 2 cups Brussels Sprouts; shaved thinly
- 2 cups Crimini Mushrooms; sliced
- 1 sprig of Rosemary

1. Combine the water, sugar and salt in the bowl of a stand mixer and sprinkle the yeast on top
- 1 1/2 cups warm (110 to 115 degrees F) water
- 1 tablespoon granulated sugar
- 2 teaspoons kosher salt
- 1 package (2 1/4 teaspoons) active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup unsalted butter, melted
- Vegetable oil, for pan
- 10 cups water
- 2/3 cup baking soda
- 2 tablespoons unsalted butter, melted
- Kosher salt, for sprinkling
Potato Skins

Crispy potato skins filled with cheese and bacon, topped with sour cream and green onions
- 6 russet potatoes (small to medium-sized is best)
- Canola oil
- Salt and pepper
- 2 tablespoons unsalted butter, melted
- 6 slices thick-cut bacon, cooked and crumbled
- 4 ounces sharp cheddar cheese, shredded
- Sour cream
- 1 green onion, thinly sliced
Baked Potato Nachos

- 3 tablespoons olive oil
- salt & pepper
- Toppings: black beans, refried beans, cheese, sour cream, greek yogurt, salsa, green chilis, avocado, enchilada sauce, jalepenos, chicken, shrimp, guacamole.

- Chicken:
- 3-4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup cornstarch
- 2 large eggs, beaten
- 1/4 cup canola oil
- Sauce:
- 3/4 cup granulated sugar
- 4 tablespoons ketchup
- 1/2 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon garlic salt

Directions: Thoroughly cream shortening and sugars; add eggs and beat well
- Filling:
- 1/2 cup shortening or vegetable oil
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 cups flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- Combine one cup of chopped dates, 1/4 cup sugar, and 1/3 cup of water. Cook over low heat until thickened. About 5 minutes should do it. Add 1/2 cup chopped walnuts, if desired.
