- Lemon Curd:
- 3 oz. Lemon Curd (below)
- 3 oz. Fresh Sliced Strawberry
- 3 oz. Lemon Pound Cake cut into 1/2 inch squares (below)
- 1 oz. Whipped Cream
- 12 Each Large Eggs
- 1/2 cup Orange Juice
- 1/2 cup Fresh Lemon Juice
- 3 cups Sugar
- 16 TBSP. Butter
- 1 qt. Whipping cream
- Lemon Pound Cake:
- 5 1/2 cup Cold Water
- 6 ea. Whole eggs
- 6 ea. Egg yolks
- 3/4 cup oil
- 1 box Yellow Cake Mix
- 1 Grated Lemon
- 3 Tbsp. Lemon extract
General Tso's Chicken (Nine Dragons)

- Marinade:
- 10 to 12 ounces chicken breasts cut into cubes
- 1 teaspoon chicken base (not bouillon; the paste-like mixture is available in gourmet stores and large supermarkets)
- Dash of white pepper
- Salt to taste
- Sugar to taste
- 1/2 teaspoon cooking wine
- 1/2 teaspoon sesame oil
- Batter:
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 heaping teaspoon baking powder
- 1/2 of a beaten egg
- 2 tablespoons oil
- 2/3 cup Water
- Pinch of salt
- Sauce:
- 1 tablespoon soy sauce
- 2 teaspoon ketchup
- 5 tablespoon white vinegar
- 5 tablespoon sugar
- 1/8 Tablespoon black pepper
- 1/8 Tablespoon chicken base
- Corn Starch to taste
- Vegetable oil to taste

- 1/2 cup Celery, cut on bias
- 1 cup Leeks, whites only, cleaned and diced
- 1 pound Chicken breast, boneless, cubed

- 1/4 cup Parsley, chopped

Dole Whip (Magic Kingdom) Version 2

- 2 cans (20 oz. Each) DOLE Crushed
- Pineapple
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
- 1/3 cup sugar
- 1 1/2 cups heavy whipping cream, whipped
- 1/2 cup chopped maraschino cherries, mini marshmallow or mini chocolate chips, (optional)
