- 3 Potatoes (Cut up and Cubed)
- 2 Carrots (Diced - I just chunk some baby carrots in there)
- 1 Chopped Onion (Optional, we don’t put this on ours)
- 2 Cups Water
Homemade Sweet Pickles (Artist Point)

- 1/2 cup non-iodized salt
- Ice water to cover, about 2 quarts
- 3 pounds sliced Kirby cucumbers
- 1 pound sliced white onion
- 3 cups apple cider vinegar
- 4 cups granulated sugar
- 2 Tbsp. mustard seeds
- 1 tsp. turmeric
- 2 cups water
CrockPot Favorite: Ten Minute Chili

- Ground Beef or Turkey (1 pound, uncooked)
- 1 Package dry chili seasoning
- 1 16 oz can chili beans in sauce
- 2 28 oz cans crushed or diced tomatoes

- Ingredients for Cheesecake:
- 1 Lb. Cream Cheese
- 10 Oz. Canned Pumpkin
- 6 Oz. Sugar
- 4 Each Eggs
- 4 Oz. Heavy Cream
- 1 Tsp. Cinnamon
- 1/2 Tsp. Ground Clove
- 1/2 Tsp. Nutmeg
- Ingredients for Crust:
- 2 Cups Graham Cracker Crumbs
- Melted Butter
CrockPot Favorite: Venison Chili

This is another of my favorite chili recipes
- 1 1/2 pounds of cubed Venison (I suppose you could use beef stew meat if you wanted)
- 1 chopped up onion. (I actually just use onion powder)
- 1 8 oz can of tomato sauce (2 if you like your chili to be thinner)
- 1 envelope of chili seasoning
Monterey Jack Cheese Grits (Yachtsman Steakhouse)

- 2 Tbsp. butter
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped scallions
- 2 garlic cloves, minced
- 1 & 1/2 cups chicken broth
- 1 & 1/2 cups water
- 3/4 cup quick-cooking grits
- 1/4 cup heavy cream
- salt & freshly ground black pepper
- 1/2 cup grated Monterey Jack cheese
Tamale Casserole

This is a pretty easy and unique meal that we have from time to time
- 1 pound ground beef (or ground turkey)
- 1 jar thick and chunky salsa (16 ounce)
- 1 package of cornbread mix (8 1/2 ounce)
- 1 1/2 cups shredded Cheddar Cheese (I buy the Mexican blend shredded cheese)
- 1/2 cup sliced olives (we don’t eat olives so I’ve never put these in ours)
Cabernet Blackberry Braised Prime Beef Short Ribs (Grand Califronian)

- 6 each prime short ribs (each bone-in short rib should weigh about 16 oz.)
- 1 bottle cabernet sauvignon
- 1 can frozen blackberries with juice (thawed)
- 1 large diced onion
- 2 coarse sliced carrots
- 1 fennel bulb
- 1/2 bunch fresh thyme stems
- 5 sage leaves
- 3 TB kosher salt
- 2 TB Coarse ground black pepper
- 4 C veal demi glace
- 2 C chicken stock
- 1/4 C neutral cooking oil
Grapefruit Cake (Brown Derby)

- Cake:
- 1 1/2 cups sifted cake flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs, separated
- 1/4 cup each: vegetable oil and water
- 3 tablespoons grapefruit juice
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon cream of tartar
- 16 -ounce can grapefruit sections, well-drained
- Cream-cheese frosting:
- 16 ounces cream cheese
- 1 teaspoon each: lemon juice and freshly grated lemon zest
- 1 cup sifted powdered sugar
- 6 drops yellow food coloring, or as desired
Fried Mahi Mahi & Sauce (Tahitian Terrace)

- 1 tsp salt
- 2 tsp vegetable oil
- 1 cup flour
- 1/8 tsp yellow food coloring
- 6 boinless mahi mahi steaks or dolphin fillets
- Sauce:
- 2 cups pineapple juice
- 1 cup sugar
- 2 1/2 Tbl cornstarch
- 3/4 cup cidcer vinegar
- 1/2 cup tomato ketchup
- 1/2 cup pineapple tidbits
